Avocado Walnut Pesto Penne- creamy heart healthy a Avocado Walnut Pesto Penne- creamy heart healthy alternative to your traditional pesto with healthy fats, fiber, and lots of antioxidants from the walnuts, avocados, a high quality olive oil. It’s so flavorful and pairs well with grilled chicken, salmon but also perfect as is. See details below- enjoy! 

For the Avocado Walnut Pesto:

2 cups basil leaves
1 avocado
1 T minced garlic
1/3 cup olive oil + 1–2 tablespoons as needed
1/2 cup walnuts (you can also use pine nuts, almonds)
1/3 cup grated parmesan
Juice of 2 lemons
Salt + pepper, to taste

For the pasta:

1 lb penne pasta
1 lb cherry tomatoes (I used multicolored mini heirloom tomatoes and sliced the bigger ones in half)
24 oz marinated bocconcini (mozzarella balls)
Fresh torn basil, for serving
Grated Parmesan, for serving
RASPBERRY GIN SMASH 💘💘💘 I’m telling you guys this RASPBERRY GIN SMASH 💘💘💘 I’m telling you guys this is the most delicious cocktail I’ve made in a long time and it’s so simple!!! Only a few ingredients- it’s so vibrant, fresh, and DELICIOUS. The perfect Valentine cocktail if you ask me. I had to use my @dexasintl Ice•ology sphere cubes because it keeps it extra cold while also making it feel a bit fancy. 

This is the most “bar quality” clear ice that I’ve ever tried! And it’s so easy. Ice-ology removes impurities and bubbles during the freezing process, resulting in crystal clear ice. It also is slower melting so doesn’t dilute your cocktails. We love it and use all the time!

6-8 raspberries, muddled 
1 oz st Germaine 
1.5 oz gin 
1/2 T simple syrup, more to taste 
Juice of 1/2 lime 
3-4 mint leaves 

Combine the muddled raspberries with the remaining ingredients and shake very well with ice. Strain over a @dexasintl ice•ology cube and top with prosecco or soda water. Garnish with raspberries and mint and enjoy!!!
