Randomly whipped up this Air Fryer Cauliflower Par Randomly whipped up this Air Fryer Cauliflower Parmesan today with what I had on hand and I’m obsessed! May even add some Panko next time for a little crunch. I get asked a lot what my go-to cutting boards are and this @dexasintl EVOLV board is at the top. It’s made with durable poly combined with ground coconut shells— coconut shells are considered a renewable material that might otherwise be headed for the landfill and @dexasintl was able to find a way to use it as a beautiful and natural filler! 🫶🏻 It’s sturdy, the perfect size, dishwasher safe, and I love the look. #dexaspartner 

The cauliflower was super easy and so yummy— 

Here’s what you need!
1 head of cauliflower, cut into florets 
1-2 T olive oil 
1 tsp EACH Italian seasoning and garlic powder 
Salt and pepper 
1 Cup marinara 
4 oz fresh mozzarella 
2/3 T Parmesan 
Air fryer parchment liners (game changer!!!)

Preheat air fryer to 400.
While it’s preheating, toss cauliflower with oil, salt, pepper, garlic powder and Italian seasoning. 
Add parchment liner to air fryer then add cauliflower. Cook for 10 minutes, tossing halfway. 
Add marinara to the top followed by cheese and cook another 3 minutes or so until melted. 
Garnish with fresh basil and red pepper flakes and enjoy!!!

5 INGREDIENT PEPPERONI PIZZA BAKED CAULI GNOCCHI ! 5 INGREDIENT PEPPERONI PIZZA BAKED CAULI GNOCCHI !! Easiest weeknight dinner that only requires 5 ingredients and 6 minutes of prep time. So so delicious and perfect for the whole family! 

2– 12 oz bags frozen cauliflower gnocchi from trader joes
1 tsp minced garlic
¾ jar of marinara (24 oz jar)
1 1/3 cups shredded cheese (I used a pizza cheese blend)
12–14 pepperonis
¼ tsp Italian seasoning, optional
Fresh basil, for serving, optional

Preheat oven to 425 degrees. 
Grease a large cast iron skillet with 2-3 T olive oil.  Heat over medium high heat then add frozen cauliflower gnocchi.  Let crisp up on each side for 1-2 minutes, trying to keep from sticking to the bottom of the pan too much (a little bit is normal). Add more oil if neccessary. 
Reduce heat to medium low, add minced garlic and toss to combine.  Cook for 30 seconds or so until fragrant. 
Remove from heat, pour in marinara and toss to combine.  Sprinkle on cheese and then arrange pepperoni’s on top.  Sprinkle italian seasoning over everything if you are using. 
Transfer to the oven to bake uncovered for 20-25 minutes, until cheese is golden and bubbly. 
Option to garnish with fresh basil and enjoy!! I love serving with a big salad and a vegetable.
