A SUMMERTIME FAVORITE 🫶🏻🥭🥰 Bbq Chicke A SUMMERTIME FAVORITE 🫶🏻🥭🥰

Bbq Chicken Bowls with Mango Salsa: crockpot chicken or pop them on the grill! Easy healthy delicious and such a crowd pleaser!

1.5–2 lbs boneless, skinless chicken thighs, excess fat trimmed
1 tsp garlic powder
1 cup bbq sauce
1 Tablespoon honey
1 Tablespoon sriracha
Salt and pepper

Mango Salsa:

2 ripe mangos, diced
1 red bell pepper, diced
1 jalapeno, seeds removed & finely diced
Juice of 1 lime
1/4 cup diced red onion
1/4 cup chopped cilantro (more or less to taste)
Salt, pepper, and Tajin to taste
Cauliflower rice or regular rice, for serving
Lime wedges, for serving

Trim excess fat off of chicken thighs using kitchen shears or a sharp knife.  Season both sides of chicken generously with salt, pepper, and garlic powder.
In a small bowl, combine bbq sauce, honey, and sriracha; set aside. 
Add chicken to crock pot followed by the sauce making sure that chicken is covered.
Put the lid on and cook on low for 2-3 hours or high for 3-4 hours, depending on the strength of your slow cooker! Mine were cooked in 2 hours. 
Shred the chicken using two forks and either store in an airtight container for up to 4 days or go ahead and make your bowls!
To make the mango salsa, combine everything together in a medium sized bowl. 
Serve Chicken over cauliflower/jasmine rice and top with mango salsa.  Serve with a lime wedge and enjoy!
SAUSAGE AND TWO POTATO SKILLET 1-2 T avocado or o SAUSAGE AND TWO POTATO SKILLET 
1-2 T avocado or olive oil 
1 lb spicy Italian sausage 
1/2 yellow onion, diced 
2 tsp minced garlic or heaping tablespoon of garlic paste (what I call lazy garlic) 
1 russet potato, peeled and diced into 1-2 inch pieces 
1 sweet potato, peeled and diced into 1-2 inch pieces 
1 T tomato paste 
2 cups veggie or chicken broth 
5-6 handfuls chopped kale 
1/2 cup heavy cream
Parmesan cheese, to taste (about 1/4 cup) 
Salt + pepper 

Heat oil in a large skillet over medium heat. Add sausage and cook breaking up with the back of your spoon until almost fully cooked. 
Add onion and sauté with the sausage until sausage is fully cooked and onion soft. 
Add in diced potatoes, garlic, tomato paste, salt and pepper. Cook for 2 minutes. 
Add in broth, bring to a boil, cover and reduce heat to a simmer for 15-20 minutes until potatoes are soft. 
Stir in kale, heavy cream, and Parmesan. Allow kale to cook for another few minutes and serve with more Parmesan. Enjoy!

5 INGREDIENT PIZZA BAGELS - KID FRIENDLY (Adjust t 5 INGREDIENT PIZZA BAGELS - KID FRIENDLY
(Adjust this depending on how many you want to make) 
5 mini bagels, sliced in half 
1/2 cup pizza sauce (more or less depending on preference)
1 cup shredded mozzarella 
Pepperoni 
Italian seasoning and sliced basil optional! 

Preheat air fryer to 380 or oven to 400 and add bagels to sheet pan. Spread sauce to the edges of the bagel, top with cheese then pepperoni. Air fry for 7-9 minutes or bake in the oven for 8-10 until cheese is melted and golden. Option to sprinkle on some Italian seasoning and sliced basil. 

Enjoy!!!

KID FRIENDLY EASY & FUN EASTER BREAKFAST IDEA!! 
🍳🐰Easter bunny egg in a hole! 

Using a bunny cookie cutter, cut a bunny out of the center of a slice of bread. Add to a hot skillet with melted butter and cook until golden and slightly toasted. Flip bread and crack an egg into the hole. Season with salt and pepper and cook on medium low for a few minutes until egg is starting to firm. Flip once more and cook for a minute or two more depending on how you and your kids like your eggs. Add in the cut out bunny pieces to toast up before serving. 

Add chives for the whiskers and serve with the toasted bunny cut out and fresh fruit! Enjoy!!
