- Rotisserie chicken.
- Buffalo sauce.
- Green onions.
- Ranch.
- Arugula.

5 Ingredient Buffalo Chicken Sweet Potatoes

Ingredients
- 4 medium sweet potatoes
- 1 rotisserie chicken (about 2 1/2 cups shredded chicken)
- 3/4 cup buffalo sauce (more or less to taste, you can always add more when serving)
- 2 sliced green onions, green parts only
- Ranch, for serving
- Arugula, for serving, optional
- Salt + pepper
Instructions
- Pre-heat oven to 425 degrees and line sheet pan with parchment paper or non stick baking mat
- Brush each cleaned and dried sweet potato with olive oil, salt + pepper and then use a fork to poke a few holes in each one
- Bake for 45-55 minutes until a fork inserts easily
- Meanwhile, toss chicken with buffalo sauce, salt + pepper and add to sliced potatoes.
- Bake for 7-9 minutes.
- Garnish with ranch and green onion.
- If adding arugula, toss with olive oil, s + p and add to the top.
