Homemade Strawberry Watermelon Ice Pops

These kid approved Homemade Strawberry Watermelon Ice Pops are the best thing to have around when everyone is in need of a cool down.

Keeping my kitchen stocked with not only the basics, but healthy snacks for my family is a full time job! I love making sure I have healthy options around for mid morning or afternoons when my littles need a pick me up, and these homemade strawberry watermelon ice pops are a top contender at the moment.

I have been making different varieties of homemade ice pops all summer long for a healthy and hydrating afternoon snack, and so far these are the favorite. Filled with watermelon, dragon fruit, strawberries, coconut water, and lime- they are full of antioxidants & fiber, but most importantly they are delicious and super refreshing.

One of my most favorite cutting boards in my kitchen is this Dexas Rubberwood Pour Spout Board. It’s great for cutting up anything juicy because it has deep grooves on all sides and a pour spout in the corner, catching the juice and making clean up an absolute breeze. The pour spout is amazing also because you can funnel the juice very easily.

These ice pops only have 5 ingredients and take just 5-10 minutes to prepare. You will need:

  • Watermelon, cubed.
  • Strawberries. Fresh or frozen.
  • Dragon Fruit, also known as Pitaya. You can find this in most grocery stores now in the freezer section. I like to buy it cubed and frozen.
  • Coconut water.
  • Lime.

Making these ice pops is truly the easiest task you will accomplish this week! Just make sure you have a blender and these ice pop sleeves and you’ll be ready to roll!

Homemade Strawberry Watermelon Ice Pops

Ingredients

  • 2 cups cubed watermelon
  • 1 cup frozen or fresh strawberries
  • 1 1/3 cup frozen dragon fruit (pitaya)
  • 1/4 cup coconut water
  • Juice of 1/2 lime

Instructions

  1. Add everything to your blender and blend until smooth.
  2. Pour into popsicle molds or pour into ice pop sleeves.  *see notes
  3. transfer to the freezer until frozen.
  4. Enjoy!!
