5 INGREDIENT APPLE BRIE & FIG PUFF PASTRY BITES 2 5 INGREDIENT APPLE BRIE & FIG PUFF PASTRY BITES 
2 sheets puff pastry 
11 oz double creme Brie 
1/4 honey crisp apple. Thinly diced
1/4 cup fig jam
Fresh thyme 

Preheat oven to 400 and grease a 24 cup mini muffin pan
Roll out puff pastry into an even layer then using a pizza roller cut into 2.5 x 2.5 squares (roughly) 
Add puff pastry squares to each muffin tin and press with your fingers creating a cup. 
Add a small piece of sliced Brie to each cup followed by apples (about 5-6 pieces per cup)
Add 1/2 tsp fig jam to each cup and then top each one with fresh thyme. 
Bake for 15-16 minutes until golden and melty. 
Enjoy!!!
If there’s one thing you make this holiday season If there’s one thing you make this holiday season let it be these HOLIDAY CUBES! They are fun and fancy and add a special touch with very minimal effort. They are made ahead and will be ready in the freezer for when your guests arrive! 

Grab your silicone ice cube trays and fill each one with: 
•a few fresh cranberries 
•2 small orange slices 
•fill half with orange juice and half with cranberry juice 
•add rosemary sprig 
FREEZE!! 

I like to serve with prosecco on top but the possibilities are endless!

5 INGREDIENT Green Chile Chicken Enchilada Skillet 5 INGREDIENT Green Chile Chicken Enchilada Skillet! You only need a few things to quick prep and assemble this dish and it’s always so delish. Put it in the rotation and let me know what you think!! 

Here’s what you’ll need! 
Shredded meat from 1 rotisserie chicken
2– 15 oz cans green Chile enchilada sauce 
8 flour tortillas, roughly torn into pieces
1 can black beans, drained and rinsed 
1 c shredded pepper jack cheese
Salt + pepper, to taste

cilantro
radishes 
avocado 
green onion
sour cream (or Greek yogurt) 
lime

INSTRUCTIONS
 Preheat oven to 400 degrees and grease a large 12 inch cast iron skillet or casserole dish with avocado oil; set aside.
In a large mixing bowl, combine shredded chicken, enchilada sauce, tortillas, and black beans; toss to combine so that everything is evenly coated.  Season to taste with salt and pepper and then spread into greased dish. 
Top chicken mixture with cheese and pop in the oven for 20-25 minutes, until golden and bubbling. 
Remove from oven, and garnish with toppings of choice or serve as is!

October, wow was it busy but so fun. Matteo’s firs October, wow was it busy but so fun. Matteo’s first birthday🥹, the Texas State fair, our school carnival, good friends birthdays, Halloween, date nights, cozy nights at home etc! My content creation is on the slower side right now but this time with my kids and family— wouldn’t trade it for anything. I’ll be back with lots of recipes one of these days! 👏🏻🙌🏻❤️
5 Ingredient Spaghetti Squash Boats !! 1 medium 5 Ingredient Spaghetti Squash Boats !! 

1 medium to large spaghetti Squash, halved lengthwise and seeds removed
1 lb ground turkey or beef, your choice!
1– 24 oz jar of your favorite marinara (I love Rao’s)
1/2 cup shredded mozzarella
Fresh basil, for serving
Salt + Pepper
Olive oil

Optional add-ins:: 
2–3 handfuls fresh spinach
1 tsp italian Seasoning
1/2 tsp garlic powder
Red Pepper flakes, for serving
Freshly grated parmesan, for serving

Preheat oven to 400 degrees and line rimmed sheet pan with foil or parchment paper.
Take a fork and poke holes all over the spaghetti squash then put on a plate and microwave for 5 minutes.  Let cool for a few minutes after!
Take the spaghetti squash and cut in half lengthwise then remove the seeds with a spoon and discard.
Drizzle the inside of each spaghetti squash with olive oil, and season with salt and pepper and then place cut side down onto greased baking sheet. Bake for 30-40 minutes, until squash releases easily.
Meanwhile, heat a few T olive oil in a large nonstick skillet over medium high heat.  Add ground turkey or beef and cook, breaking up with the back of your spoon until fully cooked through.  Season well with salt and pepper and add marinara sauce.  If you are adding in the optional- add in’s, now is the time to add spinach, Italian seasoning, and garlic powder. Stir to combine and cook another few minutes until spinach is wilted. 
When spaghetti squash is finished, flip over and use a fork to shred and fluff the inside flesh so it’s no longer attached to the walls and makes a nest, if you will.  Fill each half with Meat sauce, top with mozzarella cheese and bake for an additional 5-6 minutes, until cheese is melted.
Top with fresh basil and serve! Also an option to add parmesan and red pepper flakes before serving as well.
