My whole family LOVES this one skillet Pepperoni P My whole family LOVES this one skillet Pepperoni Pizza Chicken. It’s EASY. Only 6 Ingredients & so so delicious. Here’s what you’ll need! 👇🏻

2 large chicken breasts, sliced in half lengthwise into thinner chicken cutlets (about 1.5 lbs)
1 tsp garlic powder
1/4 cup pesto (homemade or store-bought)
3/4 cup marinara or pizza sauce
8 oz fresh mozzarella, sliced into rounds
6–8 slices of pepperoni, more if using smaller pepperonis
Salt + Pepper
Fresh basil, for serving, optional

Preheat oven to 400 degrees.
Slice each chicken breast in half lengthwise until you have two thinner “cutlets”. Season both sides generously with salt, pepper, and garlic powder. 
Heat a few T olive oil in a large cast iron skillet over medium high heat.  When oil is hot, add chicken and cook for 1-2 minutes per side, just until golden.  Remove from heat.
Spread a thin layer of pesto onto each piece of chicken, followed by marinara/pizza sauce, mozzarella slices, and pepperoni.  Transfer to the pre-heated oven and bake for 20-25 minutes, or until chicken is fully cooked. (time may depend on the size of your chicken cutlets)
Garnish with fresh basil and serve!! I love serving with an Arugula salad with balsamic vinaigrette but would also pair well with roasted veggies and pasta!

5 INGREDIENT CRANBERRY GOAT CHEESE CRESCENT ROLLS 5 INGREDIENT CRANBERRY GOAT CHEESE CRESCENT ROLLS 

Recipe! •Makes 16•
2 rolls crescent roll dough 
4 oz goat cheese 
1/2 cup cranberry relish 
Honey 
Fresh thyme 
Melted butter, optional 

Preheat oven to 375 degrees and line Sheetpan with @dexasintl silicone baking mat. Now sold In a 3 pack in-store and online @samsclub more details below. 
Roll out crescent dough and spread a thin layer of goat cheese on each one followed by cranberry relish, a drizzle of honey and thyme. 
Roll up and bake for 12-14 minutes or until golden. 
Brush with melted butter and enjoy! Best served warm. 

I’m obsessed with my @dexasintl silicone baking mats and silicone oven mitts (both in video). LEMON MASCARPONE TWICE BAKED POTATOES 
Serves 6
3 russet potatoes (mine were pretty big so if they are small, you could do 4)
4 T butter 
8 oz mascarpone cheese 
5.2 oz Boursin cheese 
1/3 cup sour cream
1/3 cup Parmesan cheese 
Salt & pepper to taste 
1 tsp garlic powder 
Juice of 1 lemon plus zest for serving 
Shredded mozzarella for topping (a few Tablespoons)
Parsley and lemon zest for serving 

1. Clean potatoes and let dry. Then poke each one a few times with a fork and rub with olive or avocado oil. Bake on a Sheetpan at 400 degrees for an hour or until soft. 
2. Remove potatoes from oven and let cool 5-10 minutes, then slice in half and carefully scoop out the potato of each half. Leave a thin layer on the outside so the skin doesn’t collapse. Add to a bowl. 
3. To the bowl with potato, add butter, mascarpone, Boursin, sour cream, Parmesan, garlic powder, salt, pepper, and lemon juice. Mash to combine and stir up really well. 
4. Fill each half with mashed potato mixture, top with shredded mozzarella and bake at 350 degrees for 18-20 minutes, broiling the last few minutes until golden. 
5. Garnish with chopped parsley and lemon zest. Enjoy!!!
