Not to toot my own horn or anything, but this PEAN Not to toot my own horn or anything, but this PEANUT BUTTER BANANA ZUCCHINI BREAD is quite possibly the best banana bread I’ve ever had. Not to mention it’s a lot healthier than most, has an entire zucchini in it and chocolate chips for good measure. It’s legit so good. Details 👇🏻

3 very ripe bananas, mashed
1 cup grated zucchini (about 1 medium zucchini), squeezed of excess moisture (easiest to do this in a paper towel or dish cloth)
1/2 cup butter, melted (can sub coconut oil, apple sauce, or other oil)
2 eggs
1/2 cup maple syrup
1 tsp vanilla
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/3 cup creamy peanut butter (the organic creamy kind from Trader Joe’s is the best)
3/4 cup chocolate chips, more or less depending on preference! 

Preheat oven to 350 degrees and line loaf pan with parchment paper.
Add banana to large mixing bowl and mash with a fork until creamy.  Add eggs, butter, maple syrup, vanilla, and peanut butter; stir until mixed really well. 
Add in flour, baking soda, salt, cinnamon, and stir to combine. 
Fold in zucchini and 1/2 cup of chocolate chips. 
Pour mixture into prepared loaf pan and top with remaining chocolate chips.
Bake for 50-60 minutes, until toothpick inserts and comes out clean.  Enjoy!!

One of the easiest one pan dinners that always hit One of the easiest one pan dinners that always hits the spot is this Turkey Taco Rice Skillet— it’s so yummy and perfect for the entire family! I snuck in some zucchini but our toddlers don’t need to know about that! 🤫 Ready in under 30 minutes too 🙌🏻🙌🏻🙌🏻 

details below— SAVE POST FOR LATER! 

2–3 T olive or avocado oil
1 lb ground turkey
1 cup yellow onion, diced 
2 cloves garlic
1 small zucchini squash, finely diced
1 can black beans, drained and rinsed
1 can fire roasted diced tomatoes
1 1/2 cup cooked white rice (I used @traderjoes frozen jasmine rice packet to make it extra easy)
2 1/2 T taco seasoning (my favorite is @sietefoods )
Salt + Pepper
1 cup shredded Mexican cheese blend
Cilantro, avocado, lime, salsa, sour cream, tortilla chips, for serving (all optional)

Heat oil in a large non stick skillet over medium high heat.  Add turkey and cook breaking up with the back of your spoon until fully cooked through.
Add onion, garlic, zucchini, taco seasoning, salt and pepper, and cook another 3-4 minutes, until onion and zucchini are soft.
Reduce heat to medium, add black beans, fire roasted tomatoes, and rice; cook another 3-4 minutes.
Stir in cheese until melted. 
Serve in bowls with toppings of choice and tortilla chips.

It’s almost okra season!!! This 5 INGREDIENT Chi It’s almost okra season!!! This 5 INGREDIENT Chicken Sausage & Okra Sheetpan meal is crazy easy. Arrange sausage, tomatoes, and okra onto Sheetpan, drizzle with olive oil, and season with salt pepper and garlic powder. Roast and serve with hot sauce! Option to add rice or Cauli rice when serving! Enjoy!

Easy tuna salad over mixed greens with crackers, c Easy tuna salad over mixed greens with crackers, carrots, and strawbs 👌🏻 an incredibly easy lunch that’s also super yum and really healthy.  I didn’t really measure but here is the gist of what I did!! Save post for later! 👍🏻

Serves 2 
2 cans tuna- today I used @safecatchfoods but also love @wildplanetfoods and @tonnino.tuna 
1-2 T Mayo, to taste 
2 tsp Dijon mustard 
1 T capers 
1-2 T sweet pickle relish (I love it so add 2) 
2 celery ribs, sliced 
Juice of 1/2 lemon
Chopped parsley 
Salt + pepper 
Mixed greens tossed with olive oil, red wine vinegar, salt and pepper 
Carrot sticks 
Strawberries 
Crackers (loving @miltonscraftbakers gluten free everything crackers)

2– 3 oz Jalapeño infused tequila (depending on strength preference)
1 1/2 c Frozen Mango chunks
1 c orange juice
1 oz Cointreau
2–3 T Agave nectar
Juice of 2 large limes
Ice, as needed
Jalapeño slices and lime wedges for serving
Tajin and lime for the rim 

For jalapeño infused tequila, combine 2 sliced jalapeños and 2 c tequila in a large jar or container. Let sit for 6-8 hours or overnight, then strain before using. Keep in an airtight container in the fridge for a few weeks.
To make the margaritas, rub the ridge of your glass with a lime wedge and then dip in chili salt (or Tajin). Add all margarita ingredients to a blender and blend until smooth. Taste and adjust strength/sweetness, as desired.
