Who’s ready for more 5 ingredient recipes this year? 🙋🏼‍♀️ This 5 ingredient sausage and red pepper penne is so simple and so satisfying! Comes together so quickly and promise everyone will love it! Makes for great leftovers too 🙌🏻

1 lb penne pasta, cooked per instructions on package
1 lb Spicy Italian Sausage, sausage links or bulk.
2 medium sized red bell peppers, medium dice
1 large shallot, thinly sliced and chopped
1–24 oz jar marinara of choice (I love the Trader Joe’s Organic vodka sauce with this recipe)
1 tsp garlic powder, optional
Parmesan, for topping, optional
salt + pepper

Heat a large skillet over medium high heat. Add 1-2 T olive oil and sausage. If using links, remove the casing and break into pieces. Break up with the back of your spoon and when the sausage is almost cooked, add in shallots and red bell peppers. Saute for another few minutes until peppers start to soften.
Pour in marinara, salt, pepper, and garlic powder & simmer over low heat.
Bring a large pot of water to a boil. Add a generous amount of salt and pasta and cook until al dente. Reserve 1/2 cup pasta water.
Add cooked pasta and reserved pasta water to skillet with sauce and toss to combine.
Top with a generous amount of parmesan and toss again. Serve warm in bowls with more parmesan and enjoy!!

EASY•ELEGANT•FESTIVE•FUN 🎄🍊These Orange Cranberry Holiday Cubes are always a favorite! Prep them ahead of time and simply store in the freezer until your guests arrive! Little effort & a whole lotta fun! You’ll need fresh cranberries, orange slices, orange juice, cranberry or pomegranate juice, and fresh rosemary! Hope you enjoy!!!

PERFECT HOLIDAY APPETIZER - BACON & BOURSIN STUFFE

PERFECT HOLIDAY APPETIZER - BACON & BOURSIN STUFFED MUSHROOMS 🎉

16 oz white or cremini mushrooms (about 24 mushrooms), reserving half of the stems and chopping them.
3 Tablespoons butter
1 shallot, finely chopped
1/3 cup chopped cooked bacon (about 4 slices)
2 tsp minced garlic
1– 5.2 oz Boursin cheese
1/2 cup grated parmesan plus a few T for topping
1/2 cup breadcrumbs (panko or regular- I use panko but both work fine!)
2 T chopped parsley
1/2 tsp thyme (fresh or dried)
Salt + pepper

Chop the 12 reserved mushroom stems and shallots.
Heat a skillet over medium heat and add butter. Add shallots and mushrooms and sauté for 3-4 minutes until soft. Add garlic and cook another 45 seconds until fragrant.
Now add cooked chopped bacon, Boursin cheese, grated parmesan cheese, panko breadcrumbs, parsley, thyme, salt & pepper. Remove from heat and combine it all together really well using a spoon.
Grease a casserole dish and add mushroom caps. Spoon Boursin mixture into the mushrooms and top with a touch more parmesan.
Bake at 375 for 20 minutes, then increase to 425 and bake an additional 5-7 minutes, until golden. Garnish with chopped parsley and enjoy!
