  1. Pre-heat oven to 425 degrees and line sheet pan with parchment paper or non stick baking mat
  2. Brush each cleaned and dried sweet potato with olive oil, salt + pepper and then use a fork to poke a few holes in each one
  3. Bake for 45-55 minutes until a fork inserts easily
  4. Meanwhile, toss chicken with buffalo sauce, salt + pepper and add to sliced potatoes. 
  5. Bake for 7-9 minutes. 
  6. Garnish with ranch and green onion. 
  7. If adding arugula, toss with olive oil, s + p and add to the top.
