One Pot Ground Turkey Hidden Veggie Pasta
- Prep Time: 5
- Cook Time: 25
- Total Time: 30 minutes
- Yield: 4 1x
- Category: Dinner
- Method: Stove top
- Cuisine: Italian
Ingredients
- 1 lb ground turkey (You could also sub ground beef or chicken)
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 2 1/2 cups marinara
- 1/2 lb pasta (I love using fussili. My kids love it too!)
- 2 1/2 cups chicken or vegetable broth
- 1 zucchini, finely grated and squeezed of excess moisture *see notes
- 1 tsp garlic powder
- Salt + pepper, to taste
- 4 Tablespoons heavy cream, completely optional just makes it a little extra creamy!
- Parmesan, for serving
- Fresh basil, for serving, optional
Instructions
- Heat a large skillet over medium high heat. Add a few tablespoons olive oil and ground turkey, and cook breaking up with the back of your spoon until almost cooked through. Add onion before turkey is fully cooked and let that cook for a few minutes until soft and turkey is cooked through.
- Add minced garlic, salt, pepper, and garlic powder, and cook another 30-45 seconds until fragrant.
- Pour in marinara sauce, pasta (uncooked), and broth. Bring to a boil, then reduce heat to a simmer, cover and cook for 17-20 minutes, stirring every 5 minutes or so, until pasta is cooked and dish is creamy, adding in the grated zucchini during the last 5 or so minutes. Stir in until well incorporated.
- Stir in heavy cream if using and adjust the salt/pepper.
- Serve with grated parmesan and fresh basil- enjoy!!
Notes:
*To grate a zucchini, remove both ends and then grate directly onto a dishcloth. Wrap the cloth around the grated zucchini, take it to the sink, and squeeze all of the moisture out! It’s that easy! I love adding to pastas, baked goods, pancakes, etc!
