This Spinach lentil salad is a new favorite of ours! Only 5 main ingredients required plus a super simple dijon vinaigrette. You are going to LOVE!
Ingredients Needed:
I used the pre-steamed and seasoned lentils from Trader Joe’s because they are so easy and incredibly delicious!
Salad:
- Spinach.
- Steamed lentils. (I use the pre-steamed lentils from Trader Joe’s found in produce section)
- Roasted red peppers. (I use jarred for convenience)
- Crumbled feta. If you can find the block of feta in brine, you will find it lasts SO much longer and much more fresh!
- Toasted bread.
Dressing:
- Olive oil.
- Red wine vinegar.
- Dijon mustard.
- Salt & Pepper.
Why You’ll LOVE this salad!
- QUICK. Talk about easy, this salad can be prepped in just about 10 minutes. All you have to do is quickly make the vinaigrette and then assemble the salad! The lentils are pre-cooked, so you will just warm them up, toss the spinach with the dressing and then put it all together.
- DELICIOUS. My husband and I are both in love with this salad. It’s so satisfying and delicious and also different from your typical salad.
- HEALTHY. This is such a good meatless meal option! Lentils are a great heart healthy, plant protein option and are high in potassium, fiber, and folate. And we all know spinach is rich in many nutrients, including Vitamin A, Vitamin C, Vitamin K, and iron.
This Lentil salad was inspired by a restaurant in Tulsa, OK called The Wild Fork. They have a cold lentil salad on their menu that is absolutely delicious (everything there is delicious!), and so I decided to come up with a version of my own. This salad is elegant but easy and so incredibly yummy. I hope you love it!

Spinach Lentil Salad with roasted red peppers and feta
This Spinach Lentil Salad with Roasted Red Peppers and Feta is SO beyond easy requiring just a few simple ingredients and 10 minutes or less of prep. It’s healthy, satisfying, and so delicious.

Ingredients
Salad:
- 4–5 handfuls spinach (about 1/2 of a 6 oz bag)
- 1 1/3 cup steamed lentils (I use the pre-steamed and seasoned lentils from Trader Joe’s in produce section)
- 1 1/2 roasted red peppers, diced (I use jarred for convenience)
- 1/2 cup crumbled feta cheese
- Toasted bread, for serving
Dressing:
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons dijon mustard
- Salt & Pepper
Instructions
- Whisk olive oil, red wine vinegar, dijon mustard, salt & pepper together in a bowl. Set aside.
- Toss spinach with vinaigrette (use as much or as little as you prefer, you will most likely have extra) and add to bowls. Top with lightly heated lentils (I like to just warm up a tad), chopped roasted red peppers, crumbed feta, and a drizzle more of the dressing. Serve with warm toasted bread and enjoy!!
- If you are making your own crostini’s, brush each slice of baguette with olive oil and bake at 400 for 6-8 minuets, until golden.
