Ingredients
- 4– 6 oz center cut salmon fillets (this recipe works great with 3 fillets as well if you don’t need 4)
- 2 cups mixed medley cherry tomatoes
- 1 tsp garlic powder
- 1 Tablespoon Worcestershire sauce
- Zest of 1 lemon
- Juice of 1/2 lemon plus wedges for serving
- Salt + Pepper
- Olive oil
- Fresh fill, as garnish, optional.
Instructions
- Preheat oven to broil and arrange rack a notch higher than halfway. Line rimmed sheetpan with parchment paper and set aside.
- Place salmon fillets onto a plate and pat dry with a paper towel. Season generously with salt & pepper and then add the garlic powder. Zest the lemon and then set aside we will be adding this to the tops of the fillets. In a separate small bowl, combine Worcestershire sauce and lemon juice. Stir together and spoon over the tops of the salmon as evenly as possible.
- Add tomatoes to the sheetpan and toss with a few tsp olive oil and season with salt and pepper.
- Arrange salmon between the tomatoes and then carefully drizzle the rest of the marinade over the tops of the salmon followed by the lemon zest.
- Transfer to the oven and broil (I do mine a notch higher than halfway) for 8-10 minutes until salmon is cooked, golden, and tomatoes are bursting.
- Garnish with fresh dill and serve with a squeeze of lemon. Enjoy!!!
