These PB & J OVERNIGHT OATS are healthy and delicious and the absolute perfect make-ahead breakfast. They will save you so much time (and sanity!) on those busy mornings and they are Super kid friendly, too!! ⁣

Here’s what you’ll need! This will make 4 servings— ⁣
⁣
2 C OLD FASHIONED OATS (SUB GLUTEN OATS FOR GF EATERS)⁣
2 C MILK OF CHOICE (I USED UNSWEETENED VANILLA ALMOND MILK, BUT ANY MILK WILL WORK)⁣
1/3 C CREAMY PEANUT BUTTER⁣
1 T MAPLE SYRUP (CAN SUB HONEY)⁣
1 T CHIA SEEDS⁣
1 SCOOP VANILLA COLLAGEN PROTEIN (OPTIONAL)⁣
JAM AND ADDITIONAL PEANUT BUTTER, FOR SERVING⁣
BANANA SLICES, FOR SERVING, OPTIONAL⁣

EASY WEEKNIGHT DINNER!! One skillet and Only 5 ingredients ❕❕⁣
⁣
5 ingredient ground turkey cauliflower rice enchilada skillet ✨⁣
⁣
1 lb ground turkey ⁣
10-12 mini peppers, sliced into rounds ⁣
1 package Cauliflower rice ⁣
2 1/2 T taco seasoning ⁣
1 1/2 c red enchilada sauce ⁣
Salt + pepper, to taste ⁣
⁣
Optional : ⁣
4 cloves garlic ⁣
Avocado, cilantro, lime and salsa for serving ⁣
You could also add 1/2 of a yellow onion if you have it! ⁣
⁣
Heat a few T oil in large skillet over medium high heat. Add turkey and cook, breaking up with the back of your spoon until fully cooked through. Season with taco seasoning, salt and pepper and add garlic if using. ⁣
Add cauliflower rice and sauté just a minute or two making sure it doesn’t get mushy.⁣
Stir in enchilada sauce, adjust seasoning and serve! I like serving with avocado, salsa, cilantro and chips but all is optional! ⁣

TRADER JOE’S PUMPKIN BRIOCHE BAKED FRENCH TOAST

TRADER JOE’S PUMPKIN BRIOCHE BAKED FRENCH TOAST 🎃🍞

1 loaf pumpkin brioche from Trader Joe’s
5 T butter, melted
1/3 c brown sugar
3 T maple syrup
7 eggs
2 c whole milk
1 T vanilla
1/2 tsp pumpkin pie spice
1/2 tsp salt
3 T sugar
Maple syrup and powdered sugar, for serving

1. Combine melted butter, brown sugar, and maple syrup and stir until creamy. Spread into the base of casserole dish.
2. In a separate bowl, whisk eggs, milk, vanilla, pumpkin pie spice, and salt together. Dip each slice of bread individually for 30-45 seconds. Shake excess and then arrange in casserole dish. Repeat with all slices. Pour remaining egg mixture on top. Cover for 30 minutes or refrigerate overnight.
3. When ready to bake, preheat oven to 375 degrees, sprinkle tops with sugar and bake for 45-55 minutes, until golden and crisp!
4. Top with powdered sugar and serve with maple syrup.
