This 5 ingredient Italian Sausage Tortellini Skillet is extremely similar to my Spicy Italian Sausage and Spinach Tortellini Soup recipe, just minimal ingredients and a slightly different take on the dish.

It’s made in just ONE skillet and has only 5 ingredients! The flavors are insane without having to do hardly anything.

This dish combines sweet Italian sausage, spinach tortellini, fire roasted tomatoes, fresh spinach, and parmesan and will be ready and on the table in under 25 minutes!

On top of all that, let me just tell ya it’s INSANELY GOOD. Alessandro and I both scarfed it down faster than humanly possible.

Ingredients

  • 1 lb bulk sweet Italian sausage (any Italian sausage will work)
  • 115 oz can fire roasted diced tomatoes
  • 110 oz package tortellini of choice
  • 2 c chicken broth
  • 34 handfuls fresh spinach
  • Salt + Pepper
  • grated parmesan, for serving, optional
  • Red pepper flakes, for serving, optional

Instructions

  1. Add 2-3 T oil in a large skillet over medium high heat. When hot, add Italian sausage and cook, breaking up with the back of your spoon until fully cooked through and crumbly.
  2. Add fire roasted diced tomatoes, tortellini, broth, and season with salt and pepper; bring to a boil, reduce heat and simmer for 10-15 minutes, until tortellini is cooked.
  3. Stir in fresh spinach until just slightly wilted.  Garnish with parmesan and red pepper flakes and serve!!

      This is as good as it gets. **use Trader Joe’s spicy bulk sausage** holy smokes. It’s my favorite meal.

    This was so good!! Love one skillet dinners, so quick and easy and so tasty!

    I ended up with what seemed like a lot of extra liquid. Didn’t want to boil too long and end up with overcooked tortellini. Next time I may half the chicken broth.

    How do you recommend freezing any leftovers?

      Hi Jeff! I would let the soup cool completely (if it’s not already) and then transfer to an airtight container in the freezer. Simply let thaw when ready to enjoy and re-heat accordingly! I have not had any issues with the tortellini being cooked prior to freezing! Hope that helps!

        Thanks! So the skillet and soup version of the recipe can be handled the same? Love freezing the soup but wasn’t sure if the skillet could be done the same since it has less liquid.

    I left this recipe and all the ingrdiants for my husband, the frozen pizza specialist, to tackle. He nailed it! We only had a log of jimmy deans sage breakfast sausage on hand and it worked great. We doubled the recipe and used one can of regular diced tomatoes and one with green chilies. My two year old loved it as well, though she picked out the spinach, so we will likely cut that down next time to hide it better!
