You’d think as a food blogger I’d eat deliciou You’d think as a food blogger I’d eat delicious, well rounded meals for every meal, but to be completely honest, my days are so hectic trying to create new content, photograph, emails, blog posts, dishes, shower 🤪etc all during Piero’s nap, so I’m usually just grabbing random things I can find for lunch. I know it’s just a phase and I’m so grateful for it but when I can find time to assemble myself a bomb ass salad like this.. it’s a good day 👍🏻⁣
⁣
I’d like to get more lunch content up on the blog. What kinds of things would you like⁣ me to create?
Got my new @ancientnutrition pumpkin spice protein Got my new @ancientnutrition pumpkin spice protein powder in yesterday and it smells soooo good, I couldn’t wait another day to try it. Made these pumpkin spice protein balls this morning and they are healthy, delicious, and so perfect for an on-the-go snack. ⁣
⁣
1/2 c rolled oats ⁣
1/4 c coconut flour ⁣
1/4 c almond flour ⁣
2 scoop protein powder (I used ancient nutrition pumpkin spice) ⁣
1/2 c creamy peanut butter ⁣
1 T flaxseed meal⁣
1 T chia seeds⁣
1 T coconut oil, melted ⁣
1/2 c maple syrup, more as needed ⁣
1/2 tsp pumpkin pie ⁣
⁣
Combine everything together in a mixing bowl. Roll into balls and place onto parchment lined baking sheet. Transfer to fridge for 15 minutes to set. Store in airtight container for 4 days. Enjoy!!!
