These 5 Ingredient Sheet Pan Shrimp Fajitas are so flavorful, ready in under 30 minutes and absolutely perfect for busy weeknights.

Ingredients You’ll Need
- Raw shrimp, peeled & deveined. I prefer to buy wild-caught shrimp, fresh or frozen. If frozen, thaw in cold water.
- Bell peppers. A combination or orange, red, and green bell peppers is delicious!
- Yellow onion.
- Garlic. Fresh is best, however, I often buy pre-peeled garlic because it does the trick during this busy season in life!
- Everything but the Elote seasoning from Trader Joe’s. This seasoning is SO yummy and can be used on so many things. If you don’t have access to a Trader Joe’s, you can substitute your favorite fajita or taco seasoning.
- Salt + Pepper.
- Olive oil.
Optional serving suggestions: cilantro, jalapeno slices, lime wedges, tortillas, guacamole, sour cream, etc.

How to make these Easy and Healthy Shrimp Fajitas
- 1. Preheat oven to 425 degrees then get out a large rimmed sheetpan and line with parchment paper.
- 2. Toss sliced bell peppers and onion with olive oil, salt, pepper, and everything but the Elote seasoning and then arrange into an even layer onto sheet pan. Bake for 16-18 minutes.
- 3. Toss shrimp with a little more olive oil, salt, pepper, garlic, and everything but the Elote seasoning. When peppers have roasted for 16-18 minutes, remove from the oven and add shrimp to sheet pan. Bake for an additional 7-8 minutes, until shrimp is cooked through.
- 4. Option to garnish fajitas with cilantro and lime and serve with tortillas (keep warm in this handy dandy tortilla warmer), guacamole, sour cream, etc. Enjoy!!

Ingredients
- 1 lb wild-caught shrimp, fresh or frozen (thaw in cold water)
- 3 bell peppers, sliced into strips (I used orange, red, and green)
- 1 small yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 T everything but the Elote seasoning from Trader Joe’s (you can also use fajita or taco seasoning)
- Salt + Pepper, to taste
- 2–3 T Olive oil
Serving Suggestions:
- Chopped cilantro
- Jalapeno slices
- Lime wedges
- Tortillas
- Guacamole
- Sour Cream
Instructions
- Preheat oven to 425 degrees and line a large rimmed sheet pan with parchment paper.
- Add bell peppers and onion to a large bowl with a little olive oil, salt, pepper, and 1 T everything but the Elote seasoning; toss to coat and then arrange into an even layer on sheetpan. Bake for 16-18 minutes.
- Meanwhile, pat shrimp dry and then toss with 1-2 tsp olive oil, salt, pepper, minced garlic, and the remaining 1 T everything but the Elote seasoning.
- Remove peppers from the oven, add shrimp and bake for an additional 7-8 minutes, option to broil for last 2 minutes, until shrimp is cooked.
- Option to garnish with lime, cilantro, and jalapeno. Serve with tortillas, guacamole, or in bowls with rice, beans, etc! Enjoy!!
