This Strawberry Poppy Seed Chicken Salad Recipe is a Spring/Summer version of your classic chicken salad. It’s a great make-ahead lunch that’s easy to throw together and lasts in the fridge for 3-4 days. It’s light, refreshing, and SO flavorful! You’ll get a fresh strawberry in each bite- YUM.

Strawberry Poppy Seed Chicken Salad

Here is what you will need to make this Strawberry Poppy Seed Chicken Salad:

  • 3 cups shredded chicken (about 1.5 lbs boneless skinless chicken breasts cooked and shredded)
  • 1/2 cup sliced almonds
  • 1/2 cup green onions, diced
  • 2 cups strawberries, diced
  • 1/2 cup chopped celery (about 2 ribs)
  • 1/3 cup chopped parsley
  • 2/3 cup mayo (I like Primal Kitchen avocado oil mayo)
  • Juice of 1 large lemon (3-4 T), plus wedges for serving
  • 2 tsp poppyseeds
  • Salt + pepper, to taste

I love making chicken salad at the start of a new week. It’s so nice to be able to reach in the fridge and quickly grab something already prepared. Otherwise, there’s no telling what I will end up eating. It only takes 20-30 minutes to make, less if you are using a rotisserie or pre-cooked chicken!

This easy chicken salad recipe is one of my favorites this time of year. It’s filled with tender chicken, juicy strawberries, sliced almonds, green onion, celery, parsley, fresh lemon juice, mayo, and poppy seeds. It’s perfect for Spring, a great healthy lunch idea, and always delicious.

Ingredients

  • 3 cups shredded chicken (about 1.5 lbs boneless skinless chicken breasts cooked and shredded)
  • 1/2 cup sliced almonds
  • 1/2 cup green onions, diced
  • 1 1/22 cups strawberries, diced (I used 2 cups, but add to taste)
  • 1/2 cup chopped celery (about 2 ribs)
  • 1/3 cup chopped parsley
  • 2/3 cup mayo (I like avocado oil mayo)
  • Juice of 1 large lemon (34 T), plus wedges for serving
  • 2 tsp poppyseeds
  • Salt + pepper, to taste

Instructions

  1. In a medium bowl, combine all ingredients and stir until creamy.  *see notes regarding strawberries
  2. Adjust Salt and pepper and serve in lettuce cups, as a wrap, over a bed of greens, with crackers, etc!

Notes:

*if your strawberries seem soft, you can combine everything but the strawberries and then fold them in last.
