The secret? 3 simple steps that make ALL the difference.

I will never make egg bites any other way again- these are the keys to soft, creamy mini egg bites

The biggest challenge with homemade egg bites is getting the texture just right. Eggs cook quickly, and too much heat can turn them rubbery or cause them to puff up and collapse. I have also found that cooking them too quickly (in the oven or in a skillet), changes their flavor profile and not in a good way.

After testing different methods, I discovered three simple tricks that make all the difference.

1. Cottage Cheese for Protein and Creaminess

Cottage cheese is one of my favorite ingredients to add to mini egg bites! Not only does it boost the protein content, but when blended with eggs, it creates a smooth, creamy mixture that bakes into a tender, custard-like texture.

Pro TIPP: Blend your eggs and cottage cheese until completely smooth before adding the sausage and greens. This helps create a silky texture without noticeable cottage cheese curds.

2. Use a Water Bath for Gentle Cooking

This step is a game changer! A water bath helps regulate the heat surrounding the egg bites, allowing them to cook more gently and evenly. When eggs cook too quickly, their proteins tighten and squeeze out moisture, resulting in that dreaded rubbery texture.

A water bath helps prevent this by creating a gentler cooking environment, keeping your mini egg bites soft, moist, and tender.

Pro TIPP: Place your muffin pan inside a larger, oven-safe roasting pan and carefully add hot water to the outer pan. Keep the water below the rim of the muffin tin so it doesn’t spill into the egg bites.

3. Bake at a Lower Temperature

Low and slow is the way to go when it comes to perfectly tender egg bites. Baking at a lower temperature gives the eggs time to set without becoming tough or overcooked. The goal is a delicate, creamy texture rather than a firm, bouncy egg muffin.

Pro TIPP: Remove the egg bites once the centers are just set. For food safety, egg dishes should reach 160°F in the center.

Ingredients for Mini Egg Bites with Cottage Cheese

These savory mini egg bites are made with a handful of simple, wholesome ingredients.

  • Eggs: The protein-rich base of the recipe.
  • Cottage cheese: Adds protein and helps create a smooth, creamy texture.
  • Breakfast sausage: Adds savory flavor and makes these bites extra satisfying.
  • Spinach or kale: An easy way to incorporate leafy greens into breakfast.
  • Salt and pepper: Simple seasonings to bring everything together.
  • Optional additions: Shredded cheese, garlic powder, or your favorite herbs.

How to Make Mini Egg Bites

Step 1: Prepare the Sausage and Greens

Cook the breakfast sausage in a skillet until fully browned and cooked through. Drain any excess grease. If using kale, remove the tough stems and finely chop the leaves. Sauté until tender. For spinach, chop finely and cook briefly to remove excess moisture. Allow the sausage and greens to cool slightly.

Step 2: Blend the Eggs and Cottage Cheese

Add the eggs and cottage cheese to a blender. Blend until completely smooth and creamy. This step is essential for achieving that silky, tender texture. Season with salt and pepper.

Step 3: Fill the Mini Muffin Pan

Lightly grease a mini muffin pan. Divide the cooked sausage and spinach or kale evenly among the muffin cups. Pour the blended egg mixture over the fillings, leaving a little room at the top.

Step 4: Prepare the Water Bath

Place the muffin pan inside a larger oven-safe pan. Carefully pour hot water into the outer pan, making sure the water stays below the rim of the muffin pan. This gentle cooking method helps prevent the egg bites from becoming dry or rubbery.

Step 5: Bake Low and Slow

Bake at a moderate-low oven temperature until the egg bites are just set in the center and reach a safe internal temperature of 160°F. Avoid overbaking! The egg bites should be tender and creamy, not browned and firm. As soon as you can gently touch the top and its firm and bouncy, they are done!

Step 6: Cool and Enjoy

Allow the mini egg bites to cool for a few minutes before removing them from the muffin pan. Enjoy warm, or store them for an easy breakfast throughout the week.

Frequently Asked Questions About Mini Egg Bites

Can You Make Mini Egg Bites Ahead of Time?

Absolutely! These mini egg bites with cottage cheese are ideal for meal prep. Prepare a batch in advance and store them in an airtight container in the refrigerator for up to 3–4 days. For longer storage, freeze them in a freezer-safe container for up to 2–3 months for best quality.

To reheat, microwave in short intervals until heated through, or warm gently in the oven. Reheat leftovers to 165°F.

Can You Freeze Mini Egg Bites?

Yes! Mini egg bites freeze beautifully, making them a convenient breakfast option. Allow the egg bites to cool before refrigerating promptly. Once chilled, arrange them on a baking sheet and freeze until firm. Transfer them to a freezer-safe bag or container. This helps prevent them from sticking together, so you can grab just a few at a time.

Why are my homemade egg bites spongy?

Spongy egg bites are often the result of excessive heat or overcooking. Eggs can puff up and become rubbery when their proteins tighten too quickly. Using a lower baking temperature and a water bath helps create a softer, more delicate texture.

What does cottage cheese do in egg bites?

Cottage cheese adds protein, moisture, and creaminess. When blended with eggs, it helps create a smooth mixture that bakes into soft, tender egg bites.

Do I have to blend the cottage cheese?

Blending is highly recommended if you want a smooth, custard-like texture. Without blending, small cottage cheese curds may remain in the finished egg bites.

Can I use kale instead of spinach?

Absolutely! Both spinach and kale work well in this recipe. Just make sure to finely chop and cook the greens to remove excess moisture before adding them.

Are mini egg bites good for meal prep?

Yes! Mini egg bites are an excellent make-ahead breakfast. They’re easy to portion, refrigerate, freeze, and reheat for busy mornings.

How do you keep mini egg bites from sticking to the pan?

Use a well-greased nonstick mini muffin pan, a food-safe silicone muffin mold, or parchment liners Allow the egg bites to rest briefly before removing them.

  • Total Time: 50 minutes
  • Yield: 24 mini egg bites 1x
  • Category: Breakfast
  • Method: Baking, Oven

Ingredients

  • 4 eggs + 2 egg whites
  • 1/2 cup + 2 Tablespoons cottage cheese
  • 1/2 lb ground breakfast sausage
  • 1/2 cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1/4 tsp ground mustard
  • 1/2 cup chopped spinach or kale
  • 1/4 cup shredded cheddar cheese
  • Salt, to taste
  • Cracked Pepper, to taste

Instructions

  1. Preheat oven to 325 degrees and get out a rimmed baking sheet that is larger than your muffin pan.
  2. To your blender, add eggs, egg whites, cottage cheese, 1/2 tsp salt, and cracked pepper. Blend until smooth, set aside.
  3. Heat olive or avocado oil in a medium sized skillet over medium high heat. Add the breakfast sausage and onion and cook until the sausage is fully browned and cooked through and onions are soft.
  4. Add garlic, garlic powder, dried mustard, salt, and pepper to taste. Stir to combine and remove from heat.
  5. Spray your mini muffin pan with avocado oil or line with parchment liners. Evenly distribute sausage mixture to each cup (about 1 Tablespoon per egg bite)
  6. Top each cup with a little chopped spinach/kale and shredded cheese, and using your fingers or a spoon, press firmly to make room for the eggs.
  7. Evenly distribute egg mixture into each muffin cup. I find it easiest to use a Tablespoon measuring scoop to transfer the mixture into the pan.
  8. Once all cups are filled, place mini muffin pan inside a larger rimmed baking sheet and carefully place both pans onto your oven rack. Slowly pour hot water (not boiling) into the outer pan until it reaches about halfway up the sides of the muffin cups, making sure not to get water in the egg mixture.
  9. Bake for 28-30 minutes, until it feels set but soft, with a light spring back to the touch (or they have reached an internal temperature of 160 degrees).
  10. Let cool and enjoy!!
