Easy One-Pot Orzo with Peas and Parmesan- a weeknight staple for our family. It’s easy, quick, healthy and BONUS: My little boys love it just as much as we do!

This is a one pot wonder that you will turn to over and over again. It’s ready in about 25 minutes and a dish the whole family will enjoy. And, only 7 ingredients needed!

My kids love orzo so this is something we make all the time. Feel free to sub mild Italian sausage if your kids don’t like spicy. You can always add red pepper flakes to the ones that do.

Easy One-Pot Orzo with Peas and Parmesan

This Easy One-Pot Orzo with Peas and Parmesan is the perfect 30 minute meal and ideal for busy weeknights.  Made in one skillet and only 8 ingredients needed!

Ingredients

  • 1 lb spicy Italian sausage
  • 1 large shallot or 2 small, finely chopped (about 1 cup)
  • 2 tsp minced garlic
  • 2 cups dried orzo
  • 4 cups chicken broth, an additional 1/2 cup as needed
  • Zest + juice of 1/2 lemon
  • 2 cups frozen peas
  • 1/2 cup grated parmesan, plus more for serving
  • salt + pepper to taste

Instructions

  1. Heat a skillet over medium high heat.  Add a few Tablespoons of olive or avocado oil and then add shallots and sausage.  Break up with the back of your spoon until sausage is fully cooked and shallots soft and fragrant.
  2. Add minced garlic and orzo and toss around for about a minute until garlic is fragrant and orzo golden.
  3. Pour in broth and season with salt + pepper.  Bring to a boil, then reduce heat to a simmer, cover and cook for 12-15 minutes, stirring every few minutes until the orzo is cooked and dish is creamy.  You may need to add another 1/2 cup of broth here.
  4. Stir in frozen peas and cook over low heat for a few minutes.
  5. Stir in lemon zest and juice, and parmesan.
  6. Serve in bowls with additional parmesan and red pepper flakes (optional). Enjoy!!
