This One Pot Sausage Orzo with Sun-dried tomatoes and Zucchini is a healthy weeknight dinner made in one pot and ready in less than 30 minutes.
This one pan meal is filled with Italian sausage, tomatoes, garlic, zucchini squash, orzo pasta, sun-dried tomatoes, balsamic vinegar, and parmesan cheese. It’s beyond easy, incredibly flavorful and satisfying!
Ingredient’s You’ll Need!
- Italian Sausage. I used mild but sweet or spicy work as well.
- Cherry tomatoes. I prefer using cherry or grape tomatoes because once they are cooked, they burst in your mouth and are incredibly delicious!
- Garlic.
- Sun-dried tomatoes. I always buy the julienne cut sun-dried tomatoes in a jar with oil. They are so flavorful!
- Zucchini squash.
- Dried orzo.
- Broth. Chicken broth or vegetable broth will work great!
- Balsamic vinegar.
- Parmesan.
- Salt and Pepper.
- Arugula. For serving. optional!
- Red pepper flakes. for serving. optional!
This is a super quick dinner recipe that requires minimal prep time and minimal dishes! It’s loaded with flavor and a great meal prep option as it re-heats perfectly! I love tossing with arugula just before serving and topping with grated parmesan and red pepper flakes. It’s so easy and SO yummy! I Hope you love it!!!

Ingredients
- 1 lb Italian Sausage (I used mild but sweet or spicy work as well)
- 1 lb cherry tomatoes
- 1 T minced garlic
- 1/3 cup chopped sun-dried tomatoes plus 2 T oil from jar
- 2 zucchini squash, ends remove and diced
- 1 1/2 cups dried orzo
- 3 1/2 cups broth
- 1 1/2 T balsamic vinegar
- 1/2 cup grated Parmesan
- Salt and Pepper, to taste
- Arugula and parmesan, for serving
- Red pepper flakes would be a delicious addition, I just left out because of my kids!
Instructions
- Heat a few T oil in a large skillet over medium high heat. Add sausage and cook, breaking up with the back of your spoon until fully cooked through.
- Add sun-dried tomatoes, oil from jar, and tomatoes and cook until tomatoes start to burst, stirring frequently, 3-4 minutes.
- Next stir in dried orzo, garlic, and zucchini and sauté for 1-2 minutes.
- Pour in broth, salt, and pepper, and stir to combine. Bring to a boil, reduce heat to low and cover for 12-14 minutes, stirring every few minutes, so orzo doesn’t get stuck to the bottom of your pan, until liquid is reduced and orzo is cooked.
- Stir in parmesan and balsamic vinegar, and season to taste with salt and pepper.
- Serve in bowls with more parmesan, red pepper flakes, and arugula. Enjoy!!
