These Chipotle Chicken Lettuce Cups are the perfect low carb yet extremely delicious lunch or dinner. The taco meat and chipotle crema can be prepared ahead of time and stored in the fridge until you’re ready to assemble. I would suggest re-heating the meat before serving. Description

Quick and Easy Chipotle Chicken Lettuce Cups.  Low-carb, super quick to throw together, and perfect for lunch or dinner.

Ingredients

For the chicken:

  • 1 lb ground chicken
  • 1/4 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp Salt
  • 1/2 tsp pepper
  • 1–2 tsp chipotle paste or 1–2 chipotle Chiles in adobo sauce, seeds removed and finely diced
  • 1/4 c chicken broth
  • Juice of 1 lime

For the chipotle crema:

  • 1/2 c Mexican crema (can also use greek yogurt or sour cream)
  • Juice of 1/2 lime, more as needed
  • 1 tsp chipotle paste or Chiles in adobo, seeds removed

Optional toppings: Serrano’s, avocado, red onion, cilantro, watermelon radish, chipotle crema, salsa, lime wedge

Instructions

  1. Heat 1 T avocado oil in non stick skillet. Add onion and garlic and cook 2 minutes. Now add chicken and cook, breaking up until no longer pink. Add spices and mix together. Now add chicken broth, reduce heat and simmer for another few minutes.
  2. To make chipotle crema, add all ingredients to blender and pulse until smooth.
  3. Spoon chicken mixture into butter lettuce cups and top with desired toppings!

Hey Guys! Hope you all had a happy happy weekend. We were up in Minocqua, Wisconsin at my sister in Law’s family house and it was such a dream. Cool temps, so many outdoor activities, family time, 1 million cheese curds, and tons of laughs! We all need a nice relaxing break from time to time. But now, it’s back to reality…back to work, our house renovation, working out, healthy eating, and recipe development for my favorite foodies. I need a break from fried food for a hot minute, so this week we are focusing on healthy healthy healthy. Before I left, I made a big batch of my Detox Cabbage Soup and put it in the freezer, so that will help tremendously!




Today, we’re having these Chipotle Chicken Cauliflower Rice Bowls with Pineapple Salsa. I like to prep my pineapple salsa and chipotle chicken ahead of time. Simply reheat the chicken and cook the cauliflower rice just before assembling. You can always sub white rice if you aren’t a fan of cauliflower rice- completely up to you! Serve with freshly chopped cilantro, avocado, sliced watermelon radish, pineapple salsa, and lime. So fresh and so yum! Enjoy!!

Ingredients

FOR THE CHICKEN:

  • 1 lb ground chicken thighs
  • 1/4 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin

  • 1/2 tsp pepper
  • 1–2 chipotle chiles in adobo sauce, seeds removed and finely diced (or 1–2 tsp chipotle paste)
  • 1/4 c chicken broth
  • Juice of 1 lime

FOR THE BOWLS:

  • 3–4 c cauliflower rice
  • 2 tsp ghee (or olive oil)
  • Juice of 1 lime
  • 1/4 c cilantro, plus more for serving
  • Salt and pepper
  • 1 watermelon radish, peeled and sliced
  • 1 large haas avocado, sliced
  • 2–3 c chopped romaine lettuce

FOR THE PINEAPPLE SALSA:

  • 2 c pineapple, diced
  • 1/4 red onion, diced
  • 1 jalepeno, seeds removed and diced
  • Juice of 1 Lime
  • 1 handful Cilantro, chopped
  • Salt, to taste

Instructions

  1. Heat a T avocado or olive oil in a non stick skillet. Add onion and garlic and cook 2 minutes. Add chicken and cook, breaking up with the back of your spoon until no longer pink and completely cooked through.
  2. Add spices, chiles, and chicken broth, and give it a good stir. Reduce heat and simmer for another 3-4 minutes.
  3. While chicken is cooking, prepare the salsa by combining all ingredients in a small bowl; store in fridge while you prep the remaining ingredients.
  4. To prepare cauliflower rice, heat ghee or oil in a non stick skillet over medium heat. When oil is hot, add cauliflower rice, season with salt and pepper and stir to combine. When rice is warm, about 3-4 minutes, remove from heat and stir in chopped cilantro and lime juice.
  5. To assemble the bowls, add chopped romaine, cauliflower rice, chipotle chicken, and top with sliced avocado, watermelon radish, pineapple salsa, and garnish with cilantro and a lime wedge.

Alessandro and I have been traveling quite a bit lately, and as much as I love love love traveling, let me just tell you- i’m pooped! We’re slowly but surely getting back into the swing of things, but I feel like the creative recipe developing part of my brain is still in slight recovery.  We went to Breckenridge last weekend with a group of our close friends from college, and man oh man was it a blast.  We pretty much spent 4 straight days enjoying all the delicious food and bevs that town has to offer.  Best times.  So worth the extreme tiredness i’m currently feeling.

Chipotle Chicken Bunless Burger Bowls

These Chipotle Chicken (Bunless) Burger Bowls are exactly what my busy week called for. They can be prepped in less than 15 minutes and make great leftovers!  Sometimes, you just want a juicy burg in your life, but don’t always want the big ole buns that come with it.  Well, these my friends– are bunless burger babes.  The patties are made of lean chicken, shallots, garlic, breadcrumbs, & spices, and are then cooked in a cast iron skillet until perfectly golden on each side. (About 4 minutes per side).

To assemble the bowls, arrange the arugula, black beans, and tomatoes around the base of the bowl. Top arugula with a chicken burger followed by avocado mash and a sprinkle of cayenne for a little extra kick.   Garnish bowls with cilantro, green onions, jalepeños, lime wedges, and dig in!

Ingredients

FOR THE BURGERS:

  • 1 lb ground chicken
  • 1/2 c season bread crumbs
  • 1 small shallot, minced
  • 3 cloves garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp chipotle paste (or 1–2 chipotle chiles in adobo)
  • 1/2 tsp paprika
  • Juice of 1/4 lime

FOR THE BOWLS:

  • 6 c arugula
  • 2 c black beans
  • 1 c cherry tomatoes, halved lengthwise
  • 2 green onions, chopped
  • Jalepenos, as garnish
  • Cilantro, ash garnish
  • lime wedges, for serving
  • 2 avocados, smashed
  • salt & pepper
  • dash of cayenne pepper

Instructions

  1. In a large mixing bowl, combine chicken, breadcrumbs, shallots, garlic, salt, pepper, chipotle paste, paprika, and lime juice. Mix until combined.
  2. Using your hands, form the chicken mixture into 6 patties. Set aside.
  3. Heat a few T of olive oil in a large cast iron skillet over medium heat. When oil is hot, add the burgers and cook for about 4 minutes per side. More/Less depending on the size of your patties.
  4. Add avocados to a bowl with salt, pepper, and lime juice. Mash with a fork until creamy but still slightly chunky.
  5. To assemble bowls, arrange the arugula, black beans, and tomatoes around the bowl. Top arugula with a chicken burger followed by avocado mash and a sprinkle of cayenne. Garnish with green onion, cilantro, jalepenos, and lime wedges. Serve!
