- 2 limes, juiced + wedges for the rim
- 1/4 cup cinnamon simple syrup (or regular, recipe below for cinnamon)
- 8 oz silver tequila (you can also use mezcal for a smokier touch–omit for cocktail version)

Cinnamon Simple Syrup:
- 1/2 cup granulated sugar (coconut sugar works also)
- 1/2 cup water
- 2 cinnamon sticks
- pinch of ground cinnamon
Instructions
- To make the simple syrup, add the sugar, water, cinnamon sticks, and ground cinnamon to a small saucepan. Bring to a simmer, stirring occasionally until the sugar has fully dissolved, 3-5 minutes. Remove from the heat and allow to cool.
- To a large pitcher, add apple cider, lime juice, and prepared simple syrup. Stir. If making mocktails, leave as is. If making cocktails, you can go ahead and add the tequila and orange liqueur now.
- Add cinnamon and sugar to a small plate. Rub a lime wedge around the rims of serving glasses then twirls in the cinnamon sugar mixture. Add ice, pour in the mixture, and garnish with cinnamon sticks + apple slices.
- Top with ginger beer if you made cocktail version. Enjoy!
