Dark Chocolate Almond Butter Cups, anyone? This 5 ingredient sweet treat is a twist on the classic Reese’s peanut butter cup, using almond butter as the filling. The process is the same, so feel free to sub peanut butter if you prefer.

I tend to eat pretty healthy most days, and so by mid-afternoon or after dinner, I absolutely need something sweet. I find that these homemade almond butter cups do the trick! I personally love to keep them in the freezer, however, you can store them in the refrigerator as well.

How to Make Dark Chocolate Almond Butter Cups

These Almond Butter cups are so easy to make, only requiring 5 main ingredients. The addition of protein powder is optional, so 6 ingredients total if you decide to add that.

  • Dark Chocolate.
  • Coconut Oil.
  • Almond Butter.
  • Honey.
  • Flaky Sea Salt. I prefer Maldon sea salt, but any will work.
  • Optional– vanilla protein powder. I like Just Ingredients Vanilla Protein- the flavor isn’t overpowering. You can also use unflavored or omit altogether.

How to Store Homemade Almond Butter Cups

Refrigerator: Store in an airtight container in the fridge for 3-4 weeks.

Freezer: Store in an airtight container in the freezer for up to 3 months. I like to slice mine in half prior to freezing so I have the option of grabbing half, and its more difficult to cut once frozen.

Ingredients

  • 1 bag dark chocolate chips 
  • 2 Tablespoons coconut oil 
  • 1/2 cup almond butter (I used crunchy for added crunch, but smooth works great)
  • 1/4 cup vanilla protein powder (optional)
  • 2 Tablespoons honey 
  • Flaky sea salt, as garnish 

Instructions

  1. Line a standard sized muffin pan with parchment paper liners. 
  2. Add 1 cup chocolate and 1 T coconut oil to a medium sized mixing bowl and melt either using a double broiler or microwaving in 30 second intervals. 
  3. Distribute melted chocolate evenly almond the muffin cups.  
  4. Tap the tray to remove any air bubbles and transfer to the fridge or freezer for 10-15 minutes. 
  5. In another bowl, combine almond butter, honey, and protein powder. 
  6. Spoon a dollop to the middle of the cups and flatten with a spoon. 
  7. Melt the remaining chocolate and coconut oil and spoon on top of the almond butter.  
  8. Top them off with a sprinkle of sea salt and transfer to the freezer.
