This is my go-to healthy make-ahead Breakfast hyperfixation! Coconut Strawberry Chia Seed Pudding.

Here is what you will need! (only 4 main ingredients needed!)
- Organic coconut milk. You can use any kind of milk here that you prefer, however, the coconut milk makes it so creamy and gives it the best flavor.
- Strawberries.
- Maple syrup. You can also use honey or any other sweetener of choice or leave it out all together.
- Chia seeds.
- Toppings of choice (all optional)- granola, shaved coconut, fresh berries, honey.

I truly cannot get enough of this coconut strawberry chia seed pudding. It only takes 5-10 minutes to prepare the night before and it will be ready to go for the next few days. Scoop it into a bowl and top it with your favorites and go on your way.

Ingredients
- 1– 15 oz can organic coconut milk
- 5 large strawberries
- 1 Tablespoon maple syrup
- 5 Tablespoons chia seeds
- Toppings of choice (all optional)- granola, shaved coconut, fresh berries, honey
Instructions
- Add coconut milk, strawberries, and maple syrup to your blender and blend until smooth. add to a large mason jar or bowl and stir in chia seeds. Cover and refrigerate overnight.
- Serve in a bowl with desired toppings and enjoy!
