If you are always on the look out for easy, healthy, and delicious weeknight meals- look no further! This Easy Crockpot Chicken Parmesan is an absolute hit with my entire family every single time. My 1 year old, 3 year old, and 6 year old all had multiple servings- I call that a win!

This slow cooker recipe only requires about 15 minutes of prep work in the morning and you will have a delicious dinner ready when you get home. Only a handful of ingredients are needed also, so it makes a quick trip to the grocery completely manageable in between all the other things going on! And trust me, with three little boys, a husband, and a business, I fully understand how busy life can be. This is a recipe I truly love and am so excited to share with you.

A crock pot recipe you will come back to!

This is a recipe you will come back to time and time again, and I feel very confident about that statement! Only a few simple ingredients are required, some of which you probably already have on hand!

Here is what you will need:

  • Chicken cutlets, or chicken breasts sliced into chicken cutlets. Take the chicken breast and slice in half lengthwise, then pound the cutlets into an even layer, not absolutely necessary, but helps to tenderize it and ensure it cooks evenly.
  • Garlic Powder.
  • Italian Seasoning.
  • All Purpose Flour.
  • Marinara.
  • Mozarella.
  • Parmesan.
  • Panko Breadcrumbs.
  • Garlic.
  • Basil.
  • Salt + Pepper.

Making this dish may seem complicated, but I promise you it really isn’t. Take your cutlets and place onto a piece of parchment paper, and then put another piece of parchment on top. Using a meat mallet or rolling pin, gently pound the chicken into an even layer. This step isn’t absolutely necessary, but I do think it helps to tenderize the chicken.

Then, go ahead and season both sides of your chicken with salt, pepper, garlic powder, and italian seasoning. Dredge each cutlet into flour and then shake off the excess. Place into a hot skillet with olive oil and cook for about 1 minute per side until lightly golden. Transfer straight from the skillet to your greased crockpot. Pour the entire jar of marinara over the tops of the chicken, put the lid on and cook on low for 3 hours. If you won’t be home after 3 hours, that’s totally fine, just make sure it switches to the “keep warm” function.

About 15 minutes before serving, add the mozzarella and parmesan then put the lid back on until melted. You can do this while you are preparing the pasta and anything else you are serving with dinner. If you decide to make the breadcrumbs, which I highly recommend for a little flavor and crunch, make these now. OR, you can make in the morning when you prep the chicken and simply store in a jar until dinnertime.

Crockpot Chicken Parmesan

Ingredients

  • 1 1/2 lbs thinly sliced chicken cutlets
  • 2 tsp EACH garlic powder and Italian seasoning
  • Salt & pepper
  • 1/2 cup all purpose flour, more as needed
  • 124 oz jar marinara
  • 8 oz fresh mozzarella (or shredded)
  • 1/2 cup shredded parmesan
  • fresh basil, for serving
  • Angel hair, for serving

Garlic Breadcrumbs (optional but recommended)

  • 2 T olive oil
  • 2 T butter
  • 2/3 cup panko breadcrumbs
  • 2 tsp minced garlic

Instructions

  1. If you have time, place chicken cutlets onto a parchment lined cutting board.  Put another piece of parchment on top and using a meat mallet, pound into an even layer.  Remove parchment and season both sides with salt, pepper, garlic powder, and italian seasoning.
  2. Dredge both sides in flour and then add to a hot skillet with olive oil; cook for about 1 minute per side until golden.
  3. Add chicken to a greased crockpot and pour the entire jar of marinara over the top.  Cook on low for 3 hours.
  4. About 15-20 minutes before serving, add the parmesan and mozzarella and put the lid back on until melted.
  5. If you are making the breadcrumbs (You can also make in the morning and store in a jar until serving), add the butter and olive oil into a small saucepan until melted.  Add garlic and breadcrumbs and toast over low heat until golden, being careful not to burn.
  6. Serve chicken parmesan with fresh basil, pasta of choice, and garlic breadcrumbs. Enjoy!!!
