Here’s what you’ll Need!

A few simple ingredients needed and a delicious & nutricious lunch will be ready in no time!

  • Avocado
  • Eggs
  • shallot
  • Buffalo Sauce
  • Cottage Cheese
  • Mayo
  • Celery
  • Chives or green onion

Avocado Buffalo Chopped Egg Salad

Ingredients

  • 1 avocado 
  • 4 hard boiled eggs
  • 1/2 small shallot 
  • 3 Tablespoons buffalo sauce 
  • 2 Tablespoons cottage cheese
  • 1 1/2 Tablespoons mayo
  • 1/2 celery stick for a little crunch, optional
  • chives or green onion 
  • Salt + Pepper 

Instructions

  1. Add it all to your cutting board and chop away to your desired texture.  
  2. Serve in lettuce cups, bell peppers, on toast, with crackers, you name it!  
  3. Enjoy!!!
