ONE POT CHICKEN & NOODLES 🍲 3 T butter + 2 T o ONE POT CHICKEN & NOODLES 🍲

3 T butter + 2 T olive oil 
1/2 yellow onion, diced (about 1 cup)
1 small shallot, finely chopped (about 1/4 c)
2 tsp minced garlic
5 carrots, peeled and sliced into rounds (about 1 1/4 c)
3 celery ribs, sliced
1/2 tsp EACH garlic powder, dried oregano, dried basil 
3 bay leaves
10 c chicken broth
2 large boneless, skinless chicken breasts
12 oz wide egg noodles
Salt and pep to taste 
Fresh chopped parsley, as garnish

Melt butter and oil in a large dutch oven over medium high heat. Add onion, shallots, carrots, celery, and spices and cook for 5-7 minutes until veggies start to soften.  Add garlic and cook another minute, until fragrant.
Pour in broth, season with salt and pepper, and add bay leaves. Bring to a boil, add raw chicken breasts, reduce heat and simmer for 10-15 minutes, until chicken is cooked through.
Remove cooked chicken and add to stand mixer or cutting board to shred; shred and set aside.
Add noddles to pot, return to a boil until noodles are cooked to your liking.
Remove bay leaves; discard.  Now add chicken back to pot and adjust salt and pepper at this time.
Serve hot in bowls garnished with fresh parsley or thyme and saltines on the side.

Who doesn’t love a ONE SKILLET meal! This Ground Who doesn’t love a ONE SKILLET meal! This Ground Turkey Sweet Potato Skillet is so easy and so flavorful! Feel free to sub any ground meat that you have/prefer! I’m making with ground beef tonight because it’s what I have. Add any and all toppings you like and call it a night. Promise you’ll love! 

*Recipe details below— SAVE POST!!*

1 lb ground turkey (ground beef or ground chicken would work as well)
1/2 yellow onion, diced (about 1 1/2 cups)
1 medium sweet potato, peeled and diced (about 3 cups)
1 red bell pepper, diced
1 jalapeno, diced
2 tsp minced garlic
1 packet taco seasoning (I used the Siete brand Spicy)
1 cup chicken broth or water
3 handfuls chopped kale (you can also use spinach)
salt + pepper, to taste
Toppings, optional: chopped cilantro, sliced jalapeños, sliced avocado, sour cream or greek yogurt, diced tomatoes, lime

Heat a large skillet over medium high heat.  Add a few tablespoons of olive oil or avocado oil and add ground turkey.  Cook, breaking up with the back of your spoon, until no longer pink and cooked through.
Season with salt + pepper and add onion, sweet potato, bell pepper, jalapeño, and garlic. Saute for 2-3 minutes, then add taco seasoning and toss to combine.
Pour in broth, bring to a boil, then reduce heat and simmer for 7-10 minutes or until sweet potatoes are tender.
Stir in kale and cook for another minute or two until slightly wilted. Season entire skillet to taste with sat + pepper. 
Serve in bowls with garnishes of choice! I like to add chopped cilantro, jalapeños, sour cream, avocado, tomatoes, and lime.

CROCKPOT CHICKEN PARMESAN— 100/10!! Highly recom CROCKPOT CHICKEN PARMESAN— 100/10!! Highly recommend the garlic butter panko breadcrumbs to add on top. They add the perfect crunch! Details below. 

*SAVE* post for when you want to make it! 

5 chicken cutlets, pounded out if you have time 
Salt, pepper, garlic powder, Italian seasoning— didn’t measure this just season both sides generously 
Flour, for dredging 
1 jar marinara of choice 
5 oz mozzarella 
Grated Parmesan 
Fresh basil for serving 
Pasta for serving 

For the breadcrumbs:
2 T butter 
2 T olive oil 
2/3 cup panko breadcrumbs 
2 tsp garlic 

Toast breadcrumbs over low heat until golden bring careful not to burn. Store in a jar for 3/4 days!

•1 large or 2 small shallots (about 1/3 cup finely chopped)
•4 oz cubed pancetta 
•red pepper flakes & 1 tsp minced garlic (optional)
•1 jar autumnal harvest pasta sauce from Trader Joe’s 
•4 cups chopped kale 
•1 lb farfalle pasta or pasta of choice 
•grated Parmesan for serving, optional
•garlic optional
