2 T extra virgin olive oil, for drizzling, more as needed

Pita Chips, for serving (can also serve with crackers, pita bread, fresh veggies, etc.)
Lemon wedges, for serving, optional
Dolmas and pepperonis, to serve on the side, optional
On a medium sized serving platter layer your ingredients starting with hummus, followed by tzatziki, then top with cucumbers, tomatoes, roasted red pepper, red onion, and finished by topping with olives, feta, toasted pine nuts, and parsley.
Just before serving, I like to drizzle with olive oil and season with salt and pepper.
Serve with pita chips, veggies, crackers, etc. and Enjoy!
*if you have the time, I suggest slightly toasting the pine nuts by adding them to a small saucepan over medium heat and toast until slightly golden and fragrant, about 3 minutes. Keep a close eye as these can burn quickly!
