Ingredients
- 2-3 T olive oil
- 1 red bell pepper, medium dice
- 1 zucchini squash, ends removed, cut into half moons
- 1 yellow squash, ends removed, cut into Half moons
- 1/4 red onion, medium dice
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp dried oregano
- Juice of 1/2 lemon
For serving: all are optional. Feel free to adjust depending on whatever you have on hand!
- Brown rice (I used a frozen packet from Trader Joe’s. You can also sub cauliflower rice)
- Tzatziki sauce (homemade or store-bought)
- Cherry tomatoes
- Kalamata Olives
- 1/2 cucumber
- Crumbled feta cheese
- Pita bread
- Fresh parsley, as garnish
- Lemon wedges
