In a large bowl, melt coconut oil and cashew butter until smooth and creamy. add maple syrup & vanilla, and stir to combine.
Now fold in oats, flaxseed, protein powder, and brewers yeast; stir to combine. Spread evenly into an 8×4 parchment lined loaf pan.
Add chocolate and coconut oil into a small microwave safe bowl. heat in 25 second intervals until melted and smooth. Drizzle onto the bars and using a spoon spread to cover completely. Add sprinkles or sea salt.
Place in the fridge for 45 minutes- 1 hour until set. Cut into bars and enjoy! Store in an airtight container in the fridge for up to 7 days.
