Roasted Veggie Mediterranean Bowls

Roasted Cauliflower & Broccoli Mediterranean Bowls

Ingredients

FOR THE VEGGIES:

  • 2 T olive oil
  • 1 1/2 c Broccoli florets
  • 1 1/2 c Cauliflower florets
  • 1/2 yellow onion, sliced
  • 4 sprigs fresh thyme
  • 3 cloves garlic, minced
  • Salt & pepper

FOR THE BOWLS:

  • Hummus
  • Cucumber, seeded and cut into chunks
  • Grape Tomatoes, halved
  • Olives
  • Parsley, chopped
  • Lemon wedges
  • Grilled Pita bread

Instructions

  1. Preheat oven to 425 and line baking sheet with parchment paper.
  2. In a medium sized bowl, toss broccoli, cauliflower, and onion with oil, garlic, thyme, salt and pepper. Spread evenly onto parchment paper and roast for 30-35 minutes, tossing halfway through.
  3. Assemble bowls with hummus, roasted veggies, cucumbers, tomatoes, olives, fresh parsley, lemon wedges, and pita bread. Option to add in protein of choice!
