Heat oil in large dutch oven or stock pot over medium high heat. When hot, add onion and sausage and cook for 5- 6 minutes, until sausage is golden and onion soft.
Add broth, carrots, cabbage, potatoes, salt, and pepper, and give it a toss. Bring to a boil, reduce heat and simmer for 20-25 minutes, or until veggies are soft. Keep an eye on it and stir it occasionally, and add broth as needed.
