This One Pot Sausage Potato and Cabbage Stew is beyond easy to throw together, super cozy, and extremely flavorful.
The andouille sausage in this one pot sausage potato and cabbage stew gives it a little kick but it’s perfectly balanced with the hearty potatoes, carrots, and cabbage.
I love that only 6 simple ingredients can yield such a flavorful and delicious dish. We’ve now made this so many times and will forever be a go-to!

HERE IS WHAT YOU’LL NEED TO MAKE THIS ONE POT SAUSAGE POTATO AND CABBAGE STEW:
- 12 oz andouille sausage, sliced into rounds
- 3-4 carrots, peeled and sliced into rounds (about 2 cups)
- 1 yellow onion, diced
- 4 Yukon gold potatoes, peeled and diced into 1-2 inch pieces (about 5 cups)
- 1/2 head green cabbage, thinly sliced (about 4 cups)
- 5 cups chicken broth, more as needed
- Salt + Pepper, to taste
- 2-3 tsp olive oil
I prefer using my Le Creuset Dutch Oven to make big stews like this, however, any large stock pot will be just fine. Start by sautéing the onion and sausage in a little bit of olive oil for a few minutes, until the sausage is golden and onion really fragrant. Then, add in carrots, potatoes, cabbage, chicken broth, salt, and pepper. Bring it all to a boil, then reduce heat and simmer for 20-25 minutes until veggies are soft. You can always add more broth if needed.

Ingredients

Instructions
- Heat oil in large dutch oven or stock pot over medium high heat. When hot, add onion and sausage and cook for 5- 6 minutes, until sausage is golden and onion soft.
- Add broth, carrots, cabbage, potatoes, salt, and pepper, and give it a toss. Bring to a boil, reduce heat and simmer for 20-25 minutes, or until veggies are soft. Keep an eye on it and stir it occasionally, and add broth as needed.
- Adjust salt and pepper to taste and enjoy!! I hope you love it!
