Ingredients: Juice of 2 1/2 large lemons; 2 T Worcestershire sauce; 1 Egg; 1/4 c yellow mustard; 6 T Olive Oil; 4 cloves Garlic, minced; 1/4 tsp Salt; 1/2 tsp Pepper; 1 1/2 tsp Anchovy paste (or 2 anchovy fillets); 1 bunch of Kale, tough stems removed, finely chopped; 1 avocado, cubed (optional); grated parmesan, for serving; 1/4 c marcona almonds

Ingredients

FOR THE DRESSING:

Juice of 2 1/2 large lemons
2 T Worcestershire sauce
1 Egg
1/4 c yellow mustard
6 T Olive Oil
4 cloves Garlic, minced
1/4 tsp Salt
1/2 tsp Pepper
1 1/2 tsp Anchovy paste (or 2 anchovy fillets)

FOR THE SALAD:

1 bunch of Kale, tough stems removed, finely chopped
1 avocado, cubed (optional)
grated parmesan, for serving
1/4 c marcona almonds

Instructions

Combine all dressing ingredients together in a large bowl or mason jar and mix together.
Toss kale with dressing and top with avocado, marcona almonds, freshly cracked pepper, & parmesan and serve!
Option to serve with protein of choice!
