Healthy Chicken Sausage and Veggie Egg Bites

  1. Preheat oven to 350 degrees and line 12 cup muffin pan with silicone or parchment liners.
  2. Heat a few T olive oil in a medium sized skillet over medium high heat.  Add red pepper, mushroom, and sausage, and cook for 3-4 minutes until veggies are tender.
  3. Reduce heat, add garlic, garlic powder, salt and pepper to skillet and sauté another minute or so, until garlic fragrant.
  4. Stir in spinach and cook another minute, until spinach is just slightly wilted. Remove from heat and set aside.
  5. Whisk eggs, egg whites, salt and pepper together in a mixing bowl; set aside.
  6. Evenly distribute veggie mixture into all 12 muffin cups, then pour egg mixture on top.
  7. Bake for 25-30 minutes, until eggs are set.
  8. Let cool, then store in an airtight container in the fridge for up to 4 days. ENJOY!!!
