  1. whisk oil, shallots, lemon, dijon, red wine vinegar, salt, and pepper together in a large bowl.
  2. Bring a large pot of salted water to a boil.  Add vinegar and potatoes and cook for 25-30 minutes, until fork inserts easily but potatoes aren’t falling apart. Drain.
  3. Add potatoes and herbs to bowl of vinaigrette and toss to coat. Adjust salt and pepper at this time.
  4. Serve warm and enjoy!
