Creamy Baked Spinach Artichoke Dip

Instructions

  1. Preheat oven to 375 degrees and grease a 9×9 baking dish; set aside.
  2. Heat oil a large nonstick skillet over medium high heat.  Add spinach and sauté 3-4 minutes, until wilted.  Add in garlic and red pepper and sauté another minute or so.
  3. Reduce heat to medium low and add in Boursin cheese and cream cheese, and stir until creamy.
  4. Add spinach mixture to a mixing bowl along with mayo, shredded cheese, artichokes,  salt and pepper; stir to combine.
  5. Spread into greased dish, top with remaining 1/2 cup cheese and bake for 30-35 minutes, until bubbling.
  6. serve with tortilla chips, crackers, or pita bread and enjoy!
