Using a stand or hand mixer, cream together the butter & sugars until smooth consistency is formed.
Add vanilla & half and half, mix well.
Add in flour & salt and continue mixing until mixture is smooth.
Stir in chocolate chips.
Press half of the cookie dough into the prepared pan until evenly distributed to all edges, and place the remaining dough in the fridge for now.
To prepare the chocolate filling, combine chocolate chips and coconut oil in a medium sized bowl. Microwave for 30 seconds at a time, stirring in between, until fully melted. Pour over cookie dough base layer and spread evenly across the top.
Freeze for up to 1 hour.
When chocolate is frozen, press the remaining half of the cookie dough mixture on top, again evenly distributing to all edges. Place back in the freezer for an additional 30-45 minutes.
Remove from freezer, cut into 1 inch cubes, drizzle with chocolate, and sprinkle with cacao nibs. Place back in freezer until chocolate has hardened, and grab yourself a bite of deliciousness!
