Cookie Dough Freezer Bites

The day has arrived to make & indulge in your very own edible cookie dough. That’s a great day if you ask me! I’m not saying that I don’t already eat cookie dough as it is, because I definitely do, however, we all know consuming raw eggs isn’t always the healthiest option. Which is why these Cookie Dough Freezer Bites have come to the rescue.

I vividly remember being a child and sneaking the bucket of cookie dough outof the freezer & eating spoonfuls upon spoonfuls.. probably even making myself sick a few times.  C’mon, please tell me you’ve done that a time or two??

I was majorly inspired by Angela from Oh She Glows to make these cute little freezer bites.  One of my best gals was raving about her Salted Almond Butter Freezer Fudge one day, so I obviously had to give them a whirl, and holy moly were they amazing! Melt-in-your-mouth, heavenly, and pretty much to die for.  I will totally be making them again soon… as soon as I indulge in this entire pan of Cookie Dough Freezer bites.

Imagine bite sized pieces of Chocolate Chip Cookie Dough covered with a Chocolately drizzle just sitting in your freezer.  We all have those desperate moments where we need something sweet but don’t feel like making anything, and if we’re completely honest, we need it right that second, not 30 minutes from then.  That’s why these little bites of heaven are absolutely perfect. Just reach in the freezer and grab one– it’s that simple.

It’s a three step process, but don’t let that scare you because they are incredible simple!

The cliff notes go a little something like this:

  1. Simply prepare the dough with a hand or Stand Mixer  (<–affiliate link), press half of the prepared dough into a parchment lined Square 9 by 9 Inch Pan (<–affiliate link), and store the other half in the fridge.  Pour chocolate filling over cookie dough and freeze for up to an hour.
  2. Remove from freezer, press remaining dough over the chocolate filling, and freeze for an additional 30-45 minutes
  3. Remove from freezer, cut into squares, drizzle with more chocolate, and top with cacao nibs.  Store in Freezer and reach in and grab one when that sweet tooth starts to kick in.

Cookie Dough Freezer Bites

Ingredients

FOR THE COOKIE DOUGH:

  • 2 1/2 c all purpose flour
  • 1 c butter, softened
  • 2/3 c granulated sugar
  • 1 c light brown sugar
  • 1/2 c half & half
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 2 c semi-sweet chocolate chips

FOR THE CHOCOLATE FILLING:

  • 1 c semi-sweet chocolate chips
  • 1 T coconut oil

FOR THE CHOCOLATE DRIZZLE:

  • 1 c semi-sweet chocolate chips
  • 1 T coconut oil
  • Cacao Nibs, for topping

Instructions

  1. Line 8 x 8 pan with parchment paper and set aside
  2. Using a stand or hand mixer, cream together the butter & sugars until smooth consistency is formed.
  3. Add vanilla & half and half, mix well.
  4. Add in flour & salt and continue mixing until mixture is smooth.
  5. Stir in chocolate chips.
  6. Press half of the cookie dough into the prepared pan until evenly distributed to all edges, and place the remaining dough in the fridge for now.
  7. To prepare the chocolate filling, combine chocolate chips and coconut oil in a medium sized bowl. Microwave for 30 seconds at a time, stirring in between, until fully melted. Pour over cookie dough base layer and spread evenly across the top.
  8. Freeze for up to 1 hour.
  9. When chocolate is frozen, press the remaining half of the cookie dough mixture on top, again evenly distributing to all edges. Place back in the freezer for an additional 30-45 minutes.
  10. Remove from freezer, cut into 1 inch cubes, drizzle with chocolate, and sprinkle with cacao nibs. Place back in freezer until chocolate has hardened, and grab yourself a bite of deliciousness!
