Cookie Butter Gooey Butter Cake

Ingredients

For the bottom layer:

  • 1 box yellow cake mix
  • 1 egg
  • 1/2 c butter, melted

For the top layer (filling):

  • 5.5 c powdered sugar
  • 2 eggs
  • 1/2 c butter, melted
  • 1/3 c cookie butter
  • 8 oz cream cheese
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees and grease a 9in x 13in baking dish, set aside.
  2. Combine yellow cake mix, 1 egg, and 1/2 c butter in mixing bowl. Mix until well combined and pour into prepared baking dish, evenly distributing into dish.
  3. Next, combine melted butter, eggs, powdered sugar, cream cheese, and vanilla in a clean mixing bowl; mix well.
  4. Pour mixture directly on top of first layer of cake and smooth out.
  5. In a small bowl,  heat up the cookie butter for about 30 seconds in the microwave, until melted.  Pour on top and using a knife gently swirl into the top layer. 
  6. Bake for 40 minutes, until golden.  Center should still be gooey.
  7. Let cool 5-10 minutes before serving.
