Name: Cherry Chicken Salad
Ingredients: 1.5- 2 lbs boneless, skinless chicken breasts, cooked and shredded (about 3.5-4 c cooked chicken); 1/2 c mayo (I used primal kitchen paleo mayo); 1/2 c greek yogurt; 1/2 c dried cherries; 3 green onions, chopped; 1 celery stalk, chopped; 1 honey crisp apple, diced; 1/3 c chopped parsley; Juice of 1/2 lemon, more to taste; Salt and pepper, to taste

Ingredients

Instructions

Add all ingredients to a large mixing bowl and toss to combine. Store in an airtight container in the fridge. Will last up to 4-5 days.
