Preheat oven to 425 degrees and line a large rimmed sheet pan with parchment paper.
Add bell peppers and onion to a large bowl with a little olive oil, salt, pepper, and 1 T everything but the Elote seasoning; toss to coat and then arrange into an even layer on sheetpan. Bake for 16-18 minutes.
Meanwhile, pat shrimp dry and then toss with 1-2 tsp olive oil, salt, pepper, minced garlic, and the remaining 1 T everything but the Elote seasoning.
Remove peppers from the oven, add shrimp and bake for an additional 7-8 minutes, option to broil for last 2 minutes, until shrimp is cooked.
Option to garnish with lime, cilantro, and jalapeno. Serve with tortillas, guacamole, or in bowls with rice, beans, etc! Enjoy!!
