30 minute Roasted Cauliflower Taco Bowls

Instructions

  1. Preheat oven to 425 degrees and line baking sheet with parchment paper.
  2. Toss cauliflower with olive oil, taco seasoning, salt, and pepper, and spread evenly onto Sheetpan.  Roast for 20-25 minutes, until roasted and slightly crispy.
  3. While cauliflower is roasting, prepare your toppings and get ready to assemble your bowls.  Warm up black beans at this time.
  4. When cauliflower is finished, arrange into bowls with black beans, cabbage, tomatoes, avocado, cilantro, jalapeños, crema, hot sauce, and a lime wedge.  enjoy!!
