Strawberry Poppy Seed Chicken Salad
Ingredients
- 3 cups shredded chicken (about 1.5 lbs boneless skinless chicken breasts cooked and shredded)
- 1/2 cup sliced almonds
- 1/2 cup green onions, diced
- 1 1/2- 2 cups strawberries, diced (I used 2 cups, but add to taste)
- 1/2 cup chopped celery (about 2 ribs)
- 1/3 cup chopped parsley
- 2/3 cup mayo (I like avocado oil mayo)
- Juice of 1 large lemon (3-4 T), plus wedges for serving
- 2 tsp poppyseeds
- Salt + pepper, to taste
Instructions
- In a medium bowl, combine all ingredients and stir until creamy. *see notes regarding strawberries
- Adjust Salt and pepper and serve in lettuce cups, as a wrap, over a bed of greens, with crackers, etc!
Notes:
*if your strawberries seem soft, you can combine everything but the strawberries and then fold them in last.
