This Watermelon Mint Salad is straight up Juicy and Delicious, and makes me wanna do a happy jig. I’ve always love a little salt with my watermelon, but adding olive oil, pepper, and mint was just about the best decision i’ve ever made. This is the best poolside snack or barbecue side dish and pretty much screams summer!
I would suggest prepping just before serving, so it’s super fresh, and try not to eat it all before your guests arrive!
Watermelon Mint Salad
- Yield: 4 1x
- 5–6 c diced watermelon
- 3 T olive oil
- Sea Salt
- Freshly cracked pepper
- 1 bunch fresh mint leaves, roughly torn
- Combine all ingredients in a large serving bowl, and toss to combine.
- Serve right away or slightly chilled.
