Vietnamese Shrimp Vermicelli Noodle Bowls


For the Shrimp:

For the Nuoc Cham (fish sauce):



  1. Prepare fish sauce by whisking all ingredients together in a small bowl.  Cover and store in fridge until you are ready to serve.
  2. Season shrimp with salt, pepper, red pepper flakes, and garlic powder; set aside.
  3. Cook noodles per instructions on package; drain and set aside.
  4. Prep remaining ingredients- carrots, cucumber, peanuts, cilantro, mint, and jalapeño; set aside.
  5. Heat a few T oil in a non stick or cast iron skillet. When hot, add shrimp and cook for 2 minutes per side, until pink and fully cooked through.
  6. To assemble the bowls, add lettuce to each bowl, followed by noodles and remaining ingredients. Serve with fish sauce and dig in!
