Does it get much prettier than this hot pink bowl of extreme tastiness?  Definitely not convinced that it does.  I love love love Pitaya and all that it has to offer.  For one, hot pink happens to be my fave color.. but aside from that, it’s loaded with amazing attributes.  This tropical superfood has been shown to lower cholesterol, prevent cancer and heart disease, aid in weight loss, and if not anything else, provides a serious energy boost!

This refreshing smoothie bowl is perfect for spring and summer, and will instantly make you feel like your in the tropics. Loaded with dragon fruit, bananas, strawberries, and pineapple- i meannnn, what more could you want?

I decided to toss in a few mint leaves, and i’m so happy that I did.  It adds the perfect amount of pizazz to this bowl of yum.  Always remember you can top with whatever you have on hand, and it will be just as delicious! For this one, I chose to top with fresh kiwi, blueberries, strawberries, banana chips, coconut flakes, granola, chia seeds, and a drizzle of honey.  Delish combo I tell ya! Now grab a spoon and head to your happy place.

Tropical Pitaya Smoothie Bowl

The most refreshing smoothie bowl loaded with antioxidants and so much more. You will instantly be taken to your happy place with this delicious bowl of goodness.

Ingredients

  • 2 frozen pitaya packets
  • 1/2 frozen banana
  • 1/4 c frozen strawberries
  • 1/2 c frozen pineapple
  • 1 T coconut oil
  • 1/3 c vanilla almond milk
  • 1 T ground flaxseed
  • 1 tsp coconut butter
  • 23 mint leaves

Optional toppings:

  • Kiwi
  • Strawberries
  • Blueberries
  • Banana chips
  • Coconut flakes
  • Chia seeds
  • Granola
  • Honey

Instructions

  1. Blend all ingredients together and top with desired toppings. Eat with a spoon and dig in!
