This Super Simple Arugula Endive Weeknight Salad is our absolute favorite go-to! We make it weekly and it pairs well with so many things.
Fresh arugula and Belgian endives are tossed in a simple balsamic vinaigrette and topped off with freshly grated parmesan.

I don’t know about you, but I did not grow up eating Belgian endives. They just weren’t something my parents used to cook with, so I wasn’t familiar and to be completely honest, I hadn’t even heard of them! Until I started dating Alessandro that is and he introduced me- now I buy and eat them weekly. They are crispy and so delicious. You can add them to salads or even roast them.
Our favorite way to eat Belgian endives is with arugula for a simple weeknight salad that comes together in just about 5 minutes! We make this all the time because it’s easy, pairs well with everything, and hits the spot every time.
I’ve been loving using these Dexas Spoon and Strain Tongs for so many things lately. They have a really nifty gravity open and close mechanism where they open when pointed down and close when pointed up. I find it super useful when quickly moving and grooving around the kitchen.

- Fresh Arugula
- Belgian Endives
- Olive oil
- Balsamic Vinegar
- Dijon Mustard
- Salt and Cracked Pepper
- Fresh parmesan
We love a big side salad with our dinner each night, but feel free to adjust this salad to your needs! You could also add radishes, tomatoes, red onion, or anything else that you like in your salad. We keep it easy most nights because it’s fast but also because we love it! I hope you enjoy!!

Ingredients
- 4 cups arugula
- 3 Belgium endives, sliced
- 3 T olive oil
- 2 T balsamic vinegar, more to taste
- 1/2 tsp dijon mustard
- Salt and cracked pepper, to taste
- Freshly grated parmesan, for serving
Instructions
- Whisk olive oil, balsamic vinegar, dijon, salt, and pepper together in a small bowl.
- Add arugula and endives to a salad bowl and pour dressing on top. Toss until greens are evenly coated and adjust salt and pepper. (I love a lot of cracked pepper on this salad!)
- Serve with shaved parmesan and enjoy!
