Strawberry Acai Smoothie Bowl- heck to the yes.

All I can say is T.G.I.T. I made the executive decision that the term T.G.I.F didn’t need to be constricted to Fridays.  Personally, I love Thursday’s because we’ve finally recovered from last weekends shenanigans, we’re feelin’ good and now just counting down the hours until it’s the freakin’ weekend.

Which brings me to tomorrow being one of my all time fave holidays, Cinco de Mayo babay.   That automatically calls for loads of chips and salsa, guacamole, queso, margaritas, nachos, quesadilla’s.. I could go on and on, but I think you get the gist.  SO, go ahead and load me up with any and all delicious fruits and veggies before all that carb-loading begins.

This refreshing bowl of goodness is a perfect way to start your day, but can obvi be enjoyed at any time.  Loaded with strawberry sweetness and mango tango, you’ll never want it to end.

The key to a good smoothie bowl in my opinion is frozen fruit.  I promise it makes the biggest difference!  The results are so much better than when using non-frozen because it doesn’t get watered down by tons of ice and gives it the extra cold factor. Please give it a whirl, i’m begging you.

I was just casually cruising down the aisle the other day at Trader Joes when I spotted the frozen Acai packets in the frozen fruit section- I meannnn, pure happiness.

Go getchu some and make this bowl ASAP.  You will love every little bite. And don’t forget to go a little crazy with the toppings.. anytime you have the opportunity to add mounds of delicious treats to an already delicious treat, take FULL advantage.

Ingredients

  • 1 frozen acai packet (found at most health food stores)
  • 1 c frozen mango
  • 1 frozen banana
  • 1/2 c frozen strawberries
  • 2 tsp agave nectar
  • 1 T coconut butter
  • 1/4 c strawberry greek yogurt
  • 1/4 c almond milk
  • a few ice cubes

Optional Toppings:

  • Sliced Banana
  • Chia Seeds
  • Granola (SO good with Trader Joe’s Almond Butter Granola)
  • Coconut flakes

Instructions

  1. Combine all smoothie ingredients in a blender and blend until smooth.
  2. Top with whatever sounds good to you! I topped mine with Almond Butter Granola, banana slices, chia seeds, freeze dried strawberries, and coconut flakes.
