1/2 cup + 1 tablespoon milk (I used breastmilk but any will work)
1/2 teaspoon cinnamon
1 cup spinach
1/2 cup grated zucchini, squeezed of excess moisture (about 1 small zucchini)
5 spoonfulONE mix-in packets *see notes
coconut oil, to cook pancakes in, optional
Add rolled oats to blender or food processor and blend until a powder like consistency, (about 30-40 seconds).
Add remaining ingredients and blend until smooth.
Heat coconut oil in a nonstick skillet over medium heat. Working in batches, drop batter by tablespoons into skillet. Cook until bubbles appear or golden on the bottom, flip, and cook another 45 seconds-1 minute until other side is golden.
Store in fridge for 5-7 days or in freezer (*see notes) for 3 months. Enjoy!!
*You can add all SpoonfulONE packets to the entire batch of batter or you can add a packet to a smaller batch of batter just before cooking.
